Yield 30 cookies

Number Of Ingredients 11

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 stick (1/2 cup) unsalted butter
1 cup sugar
1 egg
1/4 to 1/3 cup whole milk
1 teaspoon almond extract
2 teaspoons lemon zest, about 1 lemon
1/2 cup chopped almonds, toasted
1 cup frozen blueberries, thawed and drained

Steps:

  • In a medium bowl, combine flour, baking powder, and salt. In another medium bowl, cream together the butter and sugar using a hand mixer. Add egg and beat to incorporate. Add milk, almond extract, and lemon zest. Stir the dry ingredients into the wet ingredients. Fold in the almonds, then the blueberries. Chill the dough in the refrigerator for 30 minutes. Preheat the oven to 375 degrees F. Using two small spoons, dollop mix onto cookie sheets. Bake until golden brown around the edges, about 15 minutes.

Tips:

  • Use fresh or frozen blueberries for the best flavor and texture.
  • If using frozen blueberries, thaw them completely before using.
  • Be sure to measure your ingredients accurately. This will help ensure that your cookies come out perfectly.
  • Don't overmix the dough. Overmixing will make the cookies tough.
  • Chill the cookie dough before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are just set. Overbaking will make them dry and crumbly.
  • Let the cookies cool completely on a wire rack before storing them.
  • Store the cookies in an airtight container at room temperature for up to 3 days, or freeze them for up to 2 months.

Conclusion:

Blueberry almond cookies are a delicious and easy-to-make treat that are perfect for any occasion. They are soft and chewy, with a sweet and slightly tart flavor. The almonds add a nice crunch and texture. Whether you are a seasoned baker or a beginner, this recipe is sure to be a success.
