Time 40m

Number Of Ingredients 10

3-4 large croissants (cut up (about 5 to 5 1/2 cups))
1 cup fresh or frozen blueberries
1 (8 ounce) package cream cheese, softened
2/3 cup sugar
2 eggs
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon vanilla
1 cup milk
optional powdered sugar for sprinkling

Steps:

  • Preheat oven to 350 degrees.
  • Place croissant pieces in a 9 inch square pan or deep dish pie plate. Sprinkle with blueberries.
  • Beat cream cheese and sugar until well blended. Add the eggs, lemon juice, lemon zest, and vanilla in medium bowl with electric mixer until well blended. Gradually add milk, beating well after each addition. Pour evenly over croissant pieces. Let stand 20 minutes or soak overnight.
  • Bake at 350°F for 35 to 40 minutes or until set in center and golden brown. Check the dish halfway through baking...you may want to cover it with foil for the last 10 minutes if the tops are getting too browned.
  • Serve warm sprinkled with powdered sugar.
  • Variation: Instead of baking in a square pan bake individually. Place croissant pieces evenly in 10 (1/2-cup) ramekins; sprinkle with blueberries and pour cream cheese mixture evenly over croissant pieces. Let stand 20 minutes. Bake at 350°F for 20 to 25 minutes or until set in center and golden brown.

Categories     Desserts     Specialty Dessert Recipes     Bread Pudding Recipes

Time 3h35m

Yield 12

Number Of Ingredients 11

7 large croissants, cut into large cubes
cooking spray
1 cup blueberries
6 large eggs
2 cups whole milk
1 cup heavy cream
¾ cup white sugar
½ stick unsalted butter, melted
1 teaspoon almond extract
1 teaspoon ground cinnamon
¼ teaspoon salt

Steps:

  • Preheat the oven to 225 degrees F (110 degrees C). Line a baking sheet with parchment paper and spread out croissant cubes on top.
  • Bake in the preheated oven until croissant cubes are very dry, 30 to 35 minutes. Turn off the oven and cool cubes slightly.
  • Lightly spray a 9x13-inch baking dish, add dried croissants, and evenly distribute the blueberries among the croissant cubes.
  • Whisk eggs together in a large bowl. Add milk, heavy cream, sugar, butter, almond extract, cinnamon, and salt; whisk until well blended. Pour the custard mixture over the croissants, and push croissant cubes down with the palm of your hand or a large spatula to fully submerge. Cover the dish and refrigerate for 2 hours to allow the bread to absorb all of the custard.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven, uncovered, until the top is puffed and golden and the custard is set in the center, 40 to 45 minutes.
  • Remove the bread pudding to a rack and let cool for 10 minutes.

Tips:

  • Use fresh blueberries. Fresh blueberries have the best flavor and texture. If you can't find fresh blueberries, you can use frozen blueberries, but be sure to thaw them completely before using.
  • Don't overmix the dough. Overmixing the dough will make the croissants tough. Mix the dough just until it comes together, then stop.
  • Chill the dough before rolling it out. Chilling the dough will make it easier to roll out and will help prevent the croissants from shrinking in the oven.
  • Don't roll the dough out too thinly. The dough should be about 1/8-inch thick. If you roll it out too thinly, the croissants will be too crispy.
  • Proof the croissants before baking them. Proofing the croissants will allow the yeast to rise and will help the croissants to develop their characteristic flaky texture.
  • Bake the croissants until they are golden brown. The croissants should be baked for about 25-30 minutes, or until they are golden brown. If you bake them too long, they will be dry and crumbly.

Conclusion:

Blueberry croissant puffs are a delicious and easy-to-make pastry that is perfect for breakfast, brunch, or a snack. With a few simple ingredients and a little bit of time, you can create these delicious pastries that are sure to impress your friends and family.
