HEALTHY BLUEBERRY OAT BRAN MUFFINS

Healthy Blueberry Oat Bran Muffins image

This recipe was found on the Rogers Oat Bran package. I'm putting it on zaar so I won't lose it. I haven't made it yet. Oat bran and wheat bran are very good for you. UPDATE. Apr 8. I finally got around to making these. These are not a sweet muffin. I added 1/2 cup brown sugar instead of white. If you want a sweeter muffin increase the sugar. I used about 2 cups frozen blueberries as I like like a lot. I made 6 giant muffins and baked for 32 min.

Tips for Making These Blueberry Nut Oat Bran Muffins:

  • Use fresh or frozen blueberries. If using frozen blueberries, do not thaw them before adding them to the batter.
  • Be sure to measure the flour correctly. Too much flour will make the muffins dry and crumbly.
  • Do not overmix the batter. Overmixing will make the muffins tough.
  • Fill the muffin cups only 2/3 full. This will prevent the muffins from overflowing.
  • Bake the muffins in a preheated oven. This will help them rise evenly.
  • Do not overbake the muffins. Overbaking will make them dry and crumbly.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack. This will help them hold their shape.

Conclusion:

These blueberry nut oat bran muffins are a delicious and healthy way to start your day. They are packed with nutrients and flavor, and they are easy to make. So next time you are looking for a quick and easy breakfast or snack, give these muffins a try. You won't be disappointed!
