2 teaspoons baking powder

1/4 cup packed light brown sugar
1/4 cup maple syrup
1 egg, lightly beaten
1 cup milk
1/3 cup vegetable oil
1 cup blueberries
powdered sugar

Steps:

  • Preheat oven to 350 degrees and grease a 7x11-inch pan.
  • Combine pancake mix, flour, baking powder, and cinnamon in a large bowl. Whisk together.

1 cup cake flour, plus
2 tablespoons cake flour
1 cup all-purpose flour
1/4 cup sugar (with the texture of these cakes it tastes better with all this sugar)
1 tablespoon baking powder
1/2 teaspoon salt
2 cups 1% low-fat milk (You can use a low fat milk and one cup whipping cream or half and half for a thicker batter. This el)
2 large eggs
3 tablespoons melted unsalted butter
2 1/2 pints blueberries
oil, to cook pancakes
jam or maple syrup

1 teaspoon kosher salt
2 cups blueberries
2 cups buttermilk
1 teaspoon vanilla extract
2 large eggs, lightly beaten
3 tablespoons vegetable oil
2 tablespoons unsalted butter
1 cup light corn syrup
1 tablespoon vanilla extract
Pinch of ground cinnamon

Steps:

  • For the cake: Place a 10-inch cast-iron skillet in the oven. Preheat the oven to 375 degrees F.
  • Whisk together the flour, brown sugar, baking powder and salt in a large bowl. Add the blueberries and toss them gently in the flour mixture; this will help keep the blueberries from sinking to the bottom of the cake.
  • In a separate bowl, whisk together the buttermilk, vanilla and eggs. Remove the skillet from the oven and add the oil and butter to the hot skillet. 1 cup milk, plus more if needed
1 cup sour cream
1 stick butter, melted
1/2 teaspoon lemon zest

Steps:

  • Sift the flour, sugar, baking powder, baking soda and salt into a large mixing bowl. In a separate large bowl, lightly whisk the eggs.
