8 tablespoons Unsalted Butter (room temperature)
3/4 cup Sugar
1 teaspoon Baking Powder
1/2 teaspoon Salt
2 large Eggs (room temperature)
1 teaspoon Vanilla Extract
1 teaspoon Lemon Zest
1 cup All-Purpose Flour
2 cups Fresh Blueberries
2 tablespoons Sugar
1 teaspoon Cinnamon

Steps:

  • Preheat the oven to 350ºF and lightly grease an 8" or 9" square pan or a 9" or 10" round pan.
  • In the bowl of an electric mixer fitted with the paddle attachment or using a medium-sized mixing bowl and hand-held mixer beat the butter and sugar until creamy, about 4 to 5 minutes.
  • Mix in the baking powder, and salt until smooth. Add the eggs, one at a time, scraping down the bowl after each addition. Mix in the vanilla extract and lemon zest. Pour the flour into the mixture and continue mixing until it's well combined and a thick batter is formed.
  • Using a spatula spread the batter into the prepared pan evenly and top with the blueberries. Gently press some of the blueberries into the batter.

1 1/2 cups all-purpose flour
1/2 teaspoon ground cinnamon

1 egg
1/2 heaping cup sour cream
1/3 cup sugar
2 tablespoons lemon juice
1 tablespoon all-purpose flour
4 teaspoons cornstarch
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
2 cups blueberries

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-by-8-inch baking pan with cooking spray. Line the pan with parchment paper so that it hangs over on two sides. Spray the parchment.

You may use all blueberries, and the larger amount of cornstarch, if you prefer a more "gelatinous" filling, rather than a bit loose. If you follow directions carefully, you will have the most fantastic blueberry squares... I promise! Don't forget, chill for 30 minutes before baking! Please, do the crust only in the processor otherwise it will not have good results! Prep time includes chilling time of 30 minutes. Even better...use 2 cups blueberries with 1 cup raspberries if desired!

1 1/2 cups old-fashioned oatmeal
3/4 cup brown sugar, plus
