Bobby Flay's restaurants have traditionally centered on the cuisine of the Southwest or of Spain. The menu of his new restaurant, Gato, will encompass regions around the Mediterranean - Spain, yes, but Italy, Provence, Greece, North Africa. "Lots of citrus," he said, like the Meyer lemon in this recipe for crushed potatoes. (The New York Times)

Yield 6 to 8 servings

Number Of Ingredients 16

2 pounds baby red potatoes, skin on
3 cloves garlic
Kosher salt
2 tablespoons minced fresh parsley
1 tablespoon minced fresh dill
1 tablespoon minced fresh tarragon
1 Fresno chile, seeds removed and finely chopped (about 1 tablespoon)
1 tablespoon minced fresh chives
2 tablespoons finely-minced shallot
2 tablespoons chardonnay vinegar
1 tablespoon lemon juice, plus additional to taste
1 tablespoon whole-grain mustard
1/2 teaspoon honey
1/4 teaspoon kosher salt
Freshly ground black pepper
1/2 cup extra-virgin olive oil

Steps:

  • For the potato salad: Place the potatoes and whole garlic cloves in a large pot and cover by 2 inches with cold water. Season the water liberally with salt. Bring the potatoes to a simmer over medium heat and cook until fork-tender, 20 to 25 minutes. Drain the potatoes and garlic in a colander. Transfer to a sheet tray or cutting board. Gently press each potato and garlic clove to smash them and set them aside in a bowl, covering the bowl with aluminum foil to keep the potatoes warm.
  • For the vinaigrette: In a large bowl, whisk together the shallots, vinegar, lemon juice, mustard, honey, salt and a generous grinding of pepper. Slowly whisk in the olive oil to emulsify the vinaigrette.
  • Add the warm potatoes to the vinaigrette and toss to combine. Add the parsley, dill and tarragon to the potatoes. Toss to coat, seasoning with additional lemon juice and salt to taste. Transfer to a serving bowl and garnish with the Fresno chile and chives. Serve at room temperature or keep covered in the refrigerator overnight, tossing again before serving.

Number Of Ingredients 14

2 tablespoons Lemon juice
1 .1/2 teaspoons Dijon mustard
1/4 cup extra virgin live oil
1 Kosher salt and freshly ground pepper
1 teaspoon finely chopped fresh flat-leaf parsley
1/2 tablespoon finely chopped fresh oregano
2 pounds Yukon gold potatoes, peeled and diced
1 kosher salt
1 Finely grated zest of meyer lemon
2 tablespoons finely chopped fresh flat-leaf parsley
2 teaspoons finely chopped fresh oregano
2 teaspoons finely chopped fresh chives
1 Ground black pepper
1/4 cup creme fraiche

Steps:

  • For the Meyer lemon vinaigrette: In a medium bowl, whisk together lemon juice and mustard until combined. Slowly add olive oil, whisking until emulsified. Season to taste with salt and pepper. Stir in parsley and oregano; set aside.
  • For the potatoes: Put potatoes in a medium saucepan, cover with cold water by 2 inches and add 1 tablespoon kosher salt. Bring to a boil over high heat, reduce to simmer, cover and cook until fork-tender, about 20 minutes. Drain well, return potatoes to the pan and put back over low heat, stirring a few times, to dry well.
  • Add crème fraîche, lemon zest, parsley, oregano and chives. Season to taste with salt and pepper. Gently crush with a potato masher until combined. If desired, potatoes may be covered and kept in a warm oven for up to 30 minutes. To serve, transfer to a bowl and drizzle with Meyer lemon vinaigrette while still hot.

Tips:

  • Select the Right Potatoes: Opt for small, waxy potatoes like Yukon Gold or fingerling potatoes, which hold their shape well during cooking.
  • Use a Large Pan: Ensure you have a pan large enough to accommodate the potatoes in a single layer. Overcrowding the pan will result in steamed rather than roasted potatoes.
  • Roast at High Heat: Preheat your oven to 425°F (220°C) to achieve crispy, golden-brown potatoes. The high heat helps caramelize the natural sugars in the potatoes, enhancing their flavor.
  • Toss Potatoes with Oil and Seasonings: Before roasting, toss the potatoes with olive oil, salt, pepper, and any desired herbs or spices. This helps create a flavorful crust and enhances the overall taste.
  • Roast Until Tender: Roast the potatoes for approximately 20-25 minutes, or until tender when pierced with a fork. The cooking time may vary depending on the size of the potatoes and your oven.
  • Add Lemon and Parsley: Once the potatoes are roasted, immediately toss them with lemon zest, lemon juice, and chopped parsley. This adds a bright, refreshing flavor that complements the roasted potatoes perfectly.

Bobby Flay's Lemon Potatoes are an easy-to-make, flavorful side dish that pairs well with various main courses.
