Number Of Ingredients 9

1 tablespoon butter
1 clove garlic, pressed
6 pork chops
salt and pepper to taste
1 (8 ounce) can mushrooms, drained
1 cup dry sherry
1 (10.5 ounce) can beef broth
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt the butter in a large skillet over medium heat. Add garlic, and saute until fragrant. Season pork chops with salt and pepper, then fry them in the skillet just until browned on both sides, about 3 minutes per side. Remove the pork chops to a baking pan or Dutch oven.
  • Pour the mushrooms into the skillet with the pork drippings and garlic, and stir in the sherry and beef broth, scraping any bits of pork that are stuck to the pan. Bring to a boil, then pour over the pork chops in the baking pan. Cover with a lid, or aluminum foil.
  • Bake for 45 minutes in the preheated oven, then remove the lid or foil, and continue to bake for another 15 minutes. Remove the chops from the pan to a serving platter, and place the dish on the stove over medium heat. Stir together the cornstarch and water. When the juices in the pan come to a boil, slowly stir in the cornstarch mixture and cook until thickened, about 2 minutes. Spoon sauce over the chops, and serve.

This recipe is my twist on a fancy restaurant meal we got on Valentine's Day. The recipe has half the amount of garlic than was originally used. Hope everyone else enjoys it just as much as we do. Garnish with fresh parsley, chives, or thyme leaves.

Tips:

  • To ensure the pork chops are cooked evenly, use a meat thermometer to check that the internal temperature has reached 145 degrees Fahrenheit (63 degrees Celsius) before removing them from the heat.
  • If you don't have a meat thermometer, you can check the doneness of the pork chops by making a small cut into the thickest part of the meat. If the juices run clear, the pork chops are cooked.
  • To prevent the pork chops from drying out, don't overcook them. Overcooked pork chops will be tough and chewy.
  • If you are using a boneless pork chop that is very thick, you may need to butterfly it before cooking. This will help the pork chop cook evenly.
  • To butterfly a pork chop, simply slice it horizontally through the middle, but not all the way through. Open up the pork chop like a book and pound it to an even thickness.
  • You can use any type of mushrooms for this recipe, but cremini mushrooms or shiitake mushrooms work particularly well.
  • If you don't have fresh thyme, you can use 1/2 teaspoon of dried thyme.
  • Serve the pork chops with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.

Conclusion:

This recipe for boneless pork chops with mushrooms and thyme is a quick and easy weeknight dinner that is sure to please the whole family. The pork chops are juicy and tender, and the mushrooms and thyme add a delicious flavor. With just a few simple ingredients, you can create a restaurant-quality meal in the comfort of your own home.
