1 tablespoon olive oil
1 shallot, minced
1 garlic clove, minced
1/4 cup homemade or low-sodium store-bought chicken stock
2 tablespoons dry white wine, such as Sauvignon Blanc
1 tablespoon fresh thyme leaves
