BLINI - RUSSIAN PANCAKES

Blini - Russian Pancakes image

This recipe was given to me by my Russian teacher/neighbor. It is tried and true, and my family loves it! Cooking time really depends on how many skillets you are using! Many years ago when I first started making the blini, I used 1 skillet and it took forever to use up all the batter. Now I use 4 skillets and the time goes by quickly. I have substituted coconut oil and it tastes delicious, but it tends to harden if the batter is cold. Batter can be refrigerated for later use. Serve hot with sour cream and/or jelly.

I love these bite-sized pancakes because they make perfect appetizers. Top blini with smoked salmon, creme fraiche, or even caviar. Add a sprig of dill and they are sure to impress. My children also love eating these plain too!

PEPPERONI PIZZA PANCAKES

Pepperoni Pizza Pancakes image

I got this out of a magazine from the doctor's office. It sounds like a savory pancake and very easy to make. I have not tried it yet, but plan to soon, as I have the turkey pepperoni in the fridge (unless kids ate it already!) Not sure of the yield until I make them. This would be a great camping recipe too. Two of my optional ingredients would not show up, so please see note.

BONNIE'S EASY POTATO PANCAKES

BONNIE'S EASY POTATO PANCAKES image

I have made this recipe for over 40 years. I created it to use up the left over mashed potatoes. Then, we liked it so much that I always made a double batch of potatoes so there would always be enough mashed potatoes on hand to make these pancakes. I hope you enjoy them as much as we do! Enjoy!

Categories     Potatoes

Number Of Ingredients 9

- my mashed potato recipe:
8 - baking potatoes
6 - green onions finely chopped
3 - tablespoons of butter
1/2 - cup sour cream
- enough milk to make mashed potatoes.
- salt and pepper to taste
- some all purpose flour
- corn oil for frying

Steps:

  • HOW TO MAKE THE MASHED POTATOES: Peel the potatoes and cut into chunks, and then put the potatoes in a large pot with water and bring to a boil. TIP: At this point, you can turn off the burner, and you can put a lid on them and set them aside for a half hour, don't peek and they will cook by sitting. If you are in a hurry go ahead and lower heat to medium and cook until done.
  • Add the butter, chopped green onions, sour cream and salt and pepper to taste, using just a splash or more of milk to get the consistency you want. Mashed potatoes should be on the firm side, not soupy because you need them firm to make potato pancakes. They also need to be well-seasoned.
  • These potatoes are now ready to serve with a meal or to refrigerate to make potato pancakes later.
  • HOW TO MAKE THE POTATO PANCAKES: It is important to start with chilled mashed potatoes. Put a little flour, about a cup, in a paper plate. Take an ice cream scoop and scoop up the chilled mashed potatoes. Lay the scoop of potatoes on the flour, gently turn the scoop of potatoes over to coat. With your fingers pat the pancake ball down to about a 3/4 inch patty, turning one more time. The pancake should be covered with flour. I scoop and dredge the pancakes as I fry them in small batches. Using a scoop is an easy non-messy way of getting uniform sized potato pancakes.
  • Heat a large non-stick frying pan with 2 or 3 tablespoons of corn oil over medium heat, drop a few drops of water in it, it will sizzle and pop when it is hot enough to fry the pancake. Drop the floured pancake in the hot oil. Don't turn it until it is nice and brown, then flip and brown the other side. When nicely browned, serve immediately. Enjoy!

PEPPERONI PASTA WITH LEMON AND GARLIC

Pepperoni Pasta With Lemon and Garlic image

Bits of chopped pepperoni crisp up almost like bacon when fried, with curled, browned edges and a savory, spicy bite. Here, they're the foundation of a hearty pasta sauce that's supremely satisfying and fast enough for a weeknight. Lemon, garlic and fennel seeds round out the flavors, and fresh herbs lend brightness. Taste the pepperoni before adding the optional red-pepper flakes. Depending on the brand of sausage, you might not need the extra kick. And if you don't have pepperoni on hand, any kind of salami will work.

Time 25m

Yield 4 servings

Number Of Ingredients 11

Salt
1 pound medium pasta shells or orecchiette
1 tablespoon extra-virgin olive oil, plus more as needed
6 ounces pepperoni, thinly sliced, then coarsely chopped (about 2 cups)
3 garlic cloves, thinly sliced
1 teaspoon fennel seeds, cracked with a mortar and pestle or the side of a chef's knife
Pinch of red-pepper flakes (optional)
1 tablespoon tomato paste
1 small lemon, zested (if your lemon is very large, just zest half of it)
3/4 cup torn fresh basil or parsley leaves and tender stems, plus more for garnish
Grated Parmesan, for serving (optional)

Steps:

  • Bring a large pot of well-salted water to a boil. Add pasta and cook, according to package directions, until about 2 minutes shy of al dente so that the pasta can finish cooking in the sauce. Reserve 1 cup of the pasta cooking water, then drain the pasta.
  • While the pasta is cooking, in a large skillet or Dutch oven, heat oil over medium. Add pepperoni and cook, stirring occasionally, until crisped and brown, 3 to 4 minutes.
  • If the pan looks dry, drizzle in a little more oil. Add garlic, fennel seeds, red-pepper flakes (if using) and a large pinch of salt, and cook until garlic is lightly golden, 2 to 3 minutes. Add tomato paste and cook until it darkens, about 1 minute.
  • Add the drained pasta, lemon zest and 3/4 cup of the reserved pasta water to the skillet. Stir until the pasta is al dente and well coated with the sauce. Add more pasta water, if needed, until the sauce is glossy and the pasta is cooked to taste.
  • Cut the zested lemon in half and squeeze some juice into the pasta. Stir in herbs and taste, adding more lemon juice and salt, if needed. Cut the remaining half lemon into wedges and serve it alongside the pasta, which should be garnished with more herbs and a drizzle of oil, and sprinkled with Parmesan, if you like.

Tips:

  • To achieve the best results, use fresh and high-quality ingredients.
  • Make sure the pepperoni is finely diced or chopped to distribute evenly throughout the pancake batter.
  • If you prefer a crispy pancake, cook it for a few minutes longer on each side.
  • Serve the pancakes immediately with your favorite toppings, such as maple syrup, butter, or fruit.

Conclusion:

Pepperoni pancakes are a fun and unique twist on the classic breakfast dish. They are easy to make and can be enjoyed by people of all ages. Whether you are looking for a savory or sweet breakfast option, pepperoni pancakes are a great choice. Experiment with different toppings and ingredients to find your perfect combination. So next time you're in the mood for something different, give pepperoni pancakes a try!
