BLOODY BERRY FRUIT SALAD

Bloody Berry Fruit Salad image

Instead of a simple syrup, this fruit salad uses raspberry jam to coat and flavor the mixed fruits. It has just enough natural tartness to keep the fruit salad fresh. For the spookiest fruit salad, let it sit for a few hours and the lychees will continue to absorb the ruby glaze.

Provided by Food Network Kitchen

Categories     dessert

Time 30m

Yield 6 servings

Number Of Ingredients 6

1/4 cup seedless raspberry jam
1 20-ounce can lychees in syrup, drained, 2 tablespoons syrup reserved
1 1/2 teaspoons fresh lime juice
1 1/2 cups seedless red grapes, halved
1 6-ounce container raspberries (about 1 1/4 cups)
1 6-ounce container blackberries (about 1 cup)

Steps:

  • Combine the jam, lychee syrup and lime juice in a large serving bowl. Whisk until smooth.
  • Add the lychees, grapes, raspberries and blackberries and toss well. Refrigerate at least 20 minutes or up to 2 hours, tossing occasionally so the lychees turn red.

HOLIDAY EVERY DAY BERRY FRUIT SALAD

Holiday Every Day Berry Fruit Salad image

Easy, fast, good for you, and delicious, this fruit salad looks pretty, too. My wife Romelle made it for a Thanksgiving church luncheon and it was gone within a few minutes with rave reviews. The Cool Whip and yogurt mixture is the key, creating a light consistency that holds its shape. The amounts don't matter, just the ratio. I'm sure it's been done many ways, but it doesn't get any easier than this!

Categories     Dessert

Time 15m

Yield 1 fruit salad, 6-10 serving(s)

Number Of Ingredients 5

3 -4 cups non-fat vanilla yogurt or 3 -4 cups low-fat vanilla yogurt
3 -4 cups Cool Whip Lite
3 -4 cups varioius fresh berries (we used blueberries, blackberries, strawberries, red seedless grapes)
1/2 cup sweetened flaked coconut (or as much as you wish)
1/2 cup slivered almonds

Steps:

  • Wash and drain all the fruit separately - pat dry if needed.
  • Stir the yogurt and Cool Whip together thoroughly.
  • In an appropriate size tall GLASS bowl, start with a layer of the yogurt mixture, then alternate layers of the fruit and yogurt, making sure the colorful fruit is visible along the edges. End up with a layer of yogurt.
  • Sprinkle the coconut on top like snow, then sprinkle the almonds over the coconut. Add a few berries on top, if desired.
  • Refrigerate until serving time. You're done.

Tips:

  • Selecting Fresh Berries: Choose plump, brightly colored berries with no signs of bruising or mold. Look for berries that are in season for the best flavor and nutritional value.
  • Preparing Berries: Rinse berries gently under cold water to remove any dirt or debris. If using frozen berries, thaw them completely before adding to the salad.
  • Enhance Flavors: Macerate berries in a mixture of sugar or honey and citrus juice for 30 minutes to 1 hour before assembling the salad. This will intensify the flavors and create a delicious syrup.
  • Add Crunch: Incorporate crunchy elements such as chopped nuts, granola, or roasted coconut flakes to add texture and contrast to the salad.
  • Fresh Herbs: Add a touch of freshness and flavor by incorporating chopped herbs like mint, basil, or thyme into the salad.
  • Serving Suggestions: Serve the fruit salad chilled for a refreshing treat. Consider pairing it with yogurt, granola, or whipped cream for a complete and satisfying meal or snack.
