These are my favorite Borracho-style beans. I've made them for tailgating and as part of a BBQ menu.

Steps:
- Place pinto beans into a large container and cover with several inches of cool water. Soak beans 8 hours to overnight.
- Cook bacon in a large skillet over medium-high heat until crispy, about 10 minutes. Remove bacon slices to a plate lined with paper towel to drain, reserving the bacon drippings. Chop the bacon.
- Drain and rinse pinto beans; transfer to a large pot. Pour enough water over the beans to cover by several inches Stir salt and garlic powder into the water; bring to a boil and reduce heat to medium-low. Add bacon, reserved bacon drippings, beer, cilantro, green onions, diced tomatoes, and jalapeno pepper to the water; bring mixture to a simmer and cook until the beans are completely tender, 90 minutes to 2 hours.

- Soak beans in a large pot of water overnight.
- Drain beans, and refill the pot with chicken stock and enough water to cover the beans with 2 inches of liquid. Season with salt and pepper. Cover, and bring to a boil. Reduce heat to medium-low, cover, and cook for 1 1/2 hours. Stir the beans occasionally through out the entire cooking process to make sure they do not burn or stick to the bottom of the pot.
- Stir beer, tomatoes, onion, jalapeno peppers, garlic, bay leaves, oregano, and cilantro into the beans. Continue to cook uncovered for 1 hour, or until beans are tender.
- With a potato masher, crush the beans slightly to thicken the bean liquid. Adjust the seasonings with salt and pepper to taste.

- Soak your beans. (This very important if you want tender beans). Bring beans to boil in 8-10 cups of water. Remove from heat covered. Let the beans soak for 1 hour.
- Strain the beans, and discard water. Bring another 8 cups of water, and 32 ounces of chicken stock to a boil.
- While beans are starting to boil, trim the ham hocks of fat; leave fat in large pieces. Cut the meat into small bite-size pieces. Put all into pot. (Remove fat and bones when your beans are done.).
- Cut veggies into small pieces, then combine veggies, meat, fat, and spices into large stock pot or dutch oven and simmer for at least 2 1/2 hours, or until tender. Remove fat when finished. Taste, add more seasoning if needed.
ONE-POT TEXAS BORRACHO BEANS
I got this recipe from a coworker whose wife made borracho beans for a work function. They are easy to make and go great as a side dish with BBQ or Mexican food.

- Place bacon in a 2-quart pot. Cook over medium-high heat, turning occasionally, until evenly browned, 5 to 7 minutes. Remove some bacon grease, as needed, to keep from boiling the bacon. Drain bacon slices on paper towels.
- Add onion to the pot; saute in the remaining bacon grease until translucent, about 5 minutes. Add chopped jalapeno; saute until starting to soften, about 2 minutes.

EASY AND DELICIOUS BORRACHO BEANS
I wanted Borracho Beans as a side dish but didn't want to make the beans from a dried state. This recipe uses canned beans but it is so good you wouldn't know it! You can't really substitute the beer in this recipe because Borracho Beans means "drunken" and without the beer... well they just wouldn't be Borracho Beans! Also, these beans are intended to be "soupy" so if you like your beans with a thicker sauce (like me!), either use 1/2 the beer or simmer the beans longer (this is what I do).

- Sort the beans to remove any stones or grit. Rinse the beans in a colander and place in a large pan with the water and beer. Add the garlic, onion, epazote (if using), chile powder, cumin, pork or bacon, tomatoes, and salt.
- Boil the beans for an hour and then reduce to a simmer and cook over very low heat until soft (12 hours in crockpot or other slow cooker works best). Keep the level of the broth a good inch or so above the beans, and add more water as needed. Serve with broth in a bowl as a side dish.
JEN'S CHEATER BORRACHO PINTO BEANS
Here is my secret recipe! I was in a hurry to make beans one day and discovered if you rinse the canned pinto beans in hot water and add to the other ingredients, it did not taste much different that the old fashioned soaking method. This is also the non-alcoholic version of borracho beans. I am sure that you can sub a beer for some of the water and it would taste good too. All amounts are a guestimation.

- Cook bacon & onion together in large pot. Do not add oil.
- When bacon and onion are almost done, stir in garlic. Do not drain bacon grease!
- Add can of rotel with juice. Stir all together.
- Add pinto beans, seasoning to taste, and water to cover the beans. I just pour the seasoning in and stir until the water turns orangey-red.
- Cook on low until ready to serve.

TEXAS BORRACHO BEANS

- Put water into pot with soaked beans and simmer 1 hour. Add cooked bacon and 2T. drippings, and everything else but limes. Simmer, partially covered, 3 hours or until beans are very tender. Add a little more water and cover completely if too much liquid evaporates. WHEN BEANS ARE DONE, add salt to taste. Squeeze lime juice in at end of cooking.
BORRACHO BEANS OR DRUNKEN BEAN SOUP
This is a very quick and very tasty short cut to borracho bean soup. Makes a filling meal for two and is easily doubled or tripled. If you don't like spicy get the can of pintos without jalapenos and then add only one or two jalapenos without the seeds. We love spicy so we kick it up all the way. We love this soup with cheese quesadillas and homemade flour tortillas. Yum!

I bought a can of cattle beans and a very similar recipe was on the label. I embellished it a bit. Normally, bacon goes into burracho beans. I happened to have some Mexican chorizo and used that instead. If you don't want your "drunken" beans drunk, use chicken broth instead. (But, it's better with beer!)

- 1. Spray large skillet with olive oil or Pam. Add chorizo, break up and cook on medium-high.
- 2. Add onions and peppers while continuing to stir and break up until it starts to brown. Add garlic, cumin, ground chili and oregano. Cook for another minute or two. Don't let the garlic burn.
- 3. Add drained beans, can of tomatoes with chiles, and beer. (If it seems like too much beer, only pour in half and drink the rest!) Simmer together for about 20 minutes.
- 4. Add cilantro and cook for another 5-10 minutes. Taste for salt and pepper.
- 5. When serving, add a scoop of rice to the bottom of each bowl. Add beans and sprinkle on some bacon bits, cojita cheese crumbles and scatter chopped green onion on each bowl.

- 1. Using a good sharp knife or awesome pair of kitchen sheers, cut the bacon up into bite size or one inch pieces. Place into large stock pot and fry completely. It is okay if it is not crispy all over.
- 2. Chop all the onion and add to the bacon about halfway through the bacon frying.
- 3. Once the bacon and onion is finished add the cilantro, well chopped. Stir and mix well for about five minutes on a medium heat. Add the Tomatoes (blended or diced, based on preference) and simmer for about 30 minutes. If you wish a more soupy meal than add more tomatoes, again based on preference.
- 4. Lastly, add the beans and simmer on low for as long as you wish. I have eaten the beans as soon as 30 minutes or as long as 3 hours from preparation. If you are good at measuring beans and quantities, dried beans may be used.
- 5. I like to eat the soup using the scoops chips. Again, this may be used as a side or as a main meal. Notice how all ingredients are in even quantities and can be broken down to a small family meal or large gatherings.

- Use dried beans. Dried beans are more flavorful and have a better texture than canned beans. If you're using dried beans, be sure to soak them overnight before cooking.
