BOUDRO'S FAMOUS GUACAMOLE- RIVERWALK SAN ANTONIO

Boudro's Famous Guacamole- Riverwalk San Antonio image

Boudro's is a Texas Bistro on the Riverwalk in San Antonio. They wheel out a cart and make this guacamole fresh at your table. It is the best I have ever had. You can skip the roasting of the tomato and peppers if you would like to save time and it still tastes great. I also seem to remember them adding chopped garlic when we were there because I think the waitor joked about it, but it was not listed in the recipe...I always add a couple of cloves.

Number Of Ingredients 8

Juice of 1/4 of an orange
Juice of 1/2 of a lime
1 avocado, seeded and scooped out of skin
2 Tbsp roasted and charred Roma tomatoes diced
1 Serrano pepper roasted, seeded and diced
1 Tbsp medium diced red onions
1 tsp chopped cilantro
coarse ground salt to taste (sea salt is best)

Steps:

  • Squeeze juices into a bowl. Add avocado and coarsely chop(do not mash) Add onions, roasted tomato, serrano and ccilantro and fold into the avocado mixture. Add salt (more is better) Result should be crudely chopped not mashed. That's it. Enjoy

Tips:

  • Use ripe avocados for the best flavor and texture.
  • If you don't have fresh lime juice, you can use bottled lime juice, but fresh is always best.
  • To make your guacamole spicier, add more jalapeño pepper. For a milder guacamole, remove the seeds from the jalapeño pepper before mincing.
  • If you don't have cilantro, you can use parsley or basil instead.
  • Serve guacamole immediately or within a few hours of making it. Guacamole will start to brown after a few hours, so if you're not going to serve it right away, store it in an airtight container in the refrigerator.

Conclusion:

Boudro's Famous Guacamole is a delicious and easy-to-make recipe that is perfect for any occasion. This guacamole is made with fresh, ripe avocados, lime juice, cilantro, and jalapeño pepper. It is the perfect appetizer or snack and can also be used as a topping for tacos, burritos, and other Mexican dishes.
