Yield Makes 6 servings

Number Of Ingredients 15

For chips
2 medium beets with stems trimmed to 1 inch (1 lb total, including greens)
1 cup water
1 cup sugar
For curried sour cream
2 tablespoons finely chopped shallot
1 tablespoon olive oil
3/4 teaspoon Madras curry powder
3/4 cup sour cream
11/2 tablespoons finely chopped fresh chives
1/4 teaspoon salt
1/4 teaspoon black pepper
Garnish: fresh chives
Special Equipment
a Japanese Benriner or other adjustable-blade slicer; a nonstick bakeware liner such as Silpat

Steps:

  • Make chips:
  • Peel beets with a vegetable peeler, then slice paper-thin with slicer, using stems as handles.
  • Bring water and sugar to a boil in a 3-quart heavy saucepan, stirring until sugar is dissolved. Add beets, then remove pan from heat and let stand15 minutes. Drain beets in a colander, discarding liquid, then let stand in colander 15 minutes more.

1/2 medium green cabbage, cored and coarsely chopped (2 cups)
1/2 celery root (sometimes called celeriac), peeled and coarsely chopped (1 1/2 cups)
1 Turkish or 1/2 California bay leaf
4 large sprigs fresh dill plus 1/4 cup chopped

Add vinegar and sugar, stirring until sugar is dissolved, then pour soup through a sieve lined with a dampened paper towel or cheesecloth into a large bowl, discarding solids (you will have about 7 cups broth; if you have less, add enough water to bring total to 7 cups).
  • While vegetables cook, peel beets and coarsely grate using large holes of a box grater.
  • Slowly whisk 1 cup broth into sour cream in a bowl until blended, then add to soup along with grated beets, chives, and chopped dill. Cool soup completely, uncovered, then chill, covered, until cold, at least 2 hours. Season with salt and pepper before serving.

BRAISED SPICED BEETS

Braised Spiced Beets image

This one came from the New York Times, January 17th, 1999. I'm not sure what unit a "bunch" is, but hey, try for a couple or three in a bunch. You can use chicken stock instead of the vegetable stock.

Yield 6 serving(s)

Number Of Ingredients 8

3 bunches beets
2 tablespoons butter, unsalted

CREAMY BEEF WITH SOUR CREAM CHIVE BISCUITS

Creamy Beef with Sour Cream Chive Biscuits image

Slow simmered in one pot and finished off in the oven, this hearty beef dinner from the 1965 edition of Betty Crocker's Dinner in a Dish cookbook defines home-style cooking.

Provided by Betty Crocker Kitchens

Categories     Entree

Time 2h30m

Yield 4

Number Of Ingredients 19

1/2 cup Original Bisquick™ mix
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon regular or smoked paprika
1 1/2 lb beef stew meat, cut into 1-inch cubes
1 to 2 tablespoons olive oil or vegetable shortening
3 large carrots, sliced
1 medium onion, chopped (1/2 cup)
2 to 3 cloves garlic, finely chopped
1 can (14.5 oz) Muir Glen™ organic fire roasted crushed tomatoes
Water
1 bag (12 oz) frozen sweet peas
2/3 cup sour cream
1/4 teaspoon Worcestershire sauce
Salt and pepper to taste
2 cups Original Bisquick™ mix
1/3 cup sour cream
1/3 cup water
1 tablespoon chopped fresh chives

Steps:

  • In large bowl, stir together 1/2 cup Bisquick mix, the 1/2 teaspoon salt, 1/8 teaspoon pepper and the paprika. Add beef; stir until beef is evenly coated.
  • In ovenproof 4-quart Dutch oven or 12-inch skillet, heat oil over medium heat. Add beef; cook until browned on all sides. Stir in carrots, onion, garlic and tomatoes. Add just enough water to barely cover beef and vegetables. Reduce heat to low. Cover tightly; cook 1 hour 30 minutes, stirring occasionally, until beef is tender.
  • Stir in peas. Cover; cook 15 to 30 minutes longer or until peas are tender.
  • Heat oven to 425°F. Remove Dutch oven from heat; stir in 2/3 cup sour cream and the Worcestershire sauce. Season to taste with salt and pepper. Place Dutch oven in oven to keep hot while making biscuits. (You can also transfer mixture to 2-quart casserole dish at this time if Dutch oven or skillet is not ovenproof.)
  • To make Sour Cream Chive Biscuits, in medium bowl, stir together biscuit ingredients until a soft dough forms. For rolled biscuits, place dough on floured work surface; gently smooth dough into a ball and knead 5 times. With rolling pin, roll out dough until 1/2-inch thick. Cut with floured 2-inch cutter into biscuits. For drop biscuits, do not make ball or knead dough; drop dough by spoonfuls onto hot beef mixture. (Drop any remaining dough onto greased cookie sheet.)
  • Bake 15 to 20 minutes (bake biscuits on cookie sheet 10 minutes) or until light golden brown.

Nutrition Facts : ServingSize 1 Serving

Tips:

  • Choose the right beets: Look for beets that are small to medium in size, about 2 to 3 inches in diameter. These beets will be more tender and flavorful than larger beets.
  • Roast the beets before braising: Roasting the beets before braising them will help to caramelize the natural sugars in the beets and give them a deeper flavor.
  • Use a good quality braising liquid: The braising liquid is what will flavor the beets, so it's important to use a good quality liquid. A good option is a combination of chicken broth and red wine.
  • Braise the beets until they are tender: The beets should be cooked until they are tender when pierced with a fork. This will usually take about 30 minutes.
  • Serve the beets with a dollop of sour cream and chives: The sour cream and chives will add a creamy and tangy flavor to the beets.

Conclusion:

Braised beets are a delicious and versatile dish that can be served as a side dish or a main course. They are easy to make and can be tailored to your own taste. With a little planning, you can easily create a delicious and impressive dish that your friends and family will love.
