12 slices brioche, cut into 1-inch cubes
½ pound bacon, cut into 1/2-inch pieces, or more to taste
½ medium onion, finely chopped
1 green bell pepper, diced
8 medium eggs, or more to taste
1 ¼ cups milk
1 cup grated Cheddar cheese
1 teaspoon mustard powder
½ teaspoon ground black pepper
½ teaspoon salt

Steps:

  • Grease a 9x13-inch pan. Layer brioche cubes evenly in the prepared pan.
  • Cook the bacon in a skillet over medium heat, stirring occasionally, until it is cooked through, about 10 minutes. Remove from heat, including any rendered bacon fat, and allow to cool slightly, about 5 minutes.
  • Heat a small amount of bacon fat in the same skillet over medium-high heat. Saute onion and bell pepper until soft, 5 to 7 minutes.
  • Meanwhile, beat eggs in a large bowl. Mix milk, Cheddar cheese, mustard powder, pepper, and salt into the beaten eggs. Mix in bacon and onion-bell pepper mixture when done. Carefully pour the egg mixture over the brioche bread cubes and give it a gentle stir so everything is evenly distributed. Gently press the cubes into the egg mixture as needed, so all the bread cubes are sitting in the liquid. Cover and refrigerate for 8 hours, to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven on the middle rack until set, the top is browned, and a toothpick inserted into the center of the casserole comes out clean, 45 to 55 minutes. Remove from the oven and allow to cool slightly before serving, 5 to 10 minutes.

12 strips bacon, chopped
¼ cup all-purpose flour
1 teaspoon black pepper

4 cups milk, warm

15 slices white bread
17 slices ham
3 cups shredded mozzarella cheese, divided
1 teaspoon fresh chives, chopped, for garnish
8 eggs, made sunny-side up, for serving

Steps:

  • In a medium pan over high heat, cook the bacon until browned, about 12 minutes. Transfer the bacon bits to a paper towel to drain and leave the bacon grease in the pan.
  • To the pan, add the flour, pepper, and salt and whisk to combine for 5 minutes. Add the milk and Dijon mustard and cook until thickened, about 5 minutes. Remove the béchamel sauce from the heat and cover to keep warm.
  • Preheat the oven to 350°F (180°C). Grease a bundt pan with the salted butter. Line a baking sheet with parchment paper.
  • With a rolling pin, roll out the bread to flatten and cut 8 slices in half.
  • Arrange the 7 whole slices around the outer sides of the bundt pan and 4 half slices around the inner ring. Place 5 slices of ham over the bread. Sprinkle 1 cup (100 g) of mozzarella and ⅓ of the chopped bacon on top of the ham.

  • Broil for 10 minutes, until the cheese is melted and browned.
  • Sprinkle the ring with parsley. Transfer the rest of the béchamel sauce to a small bowl and place in the middle of the ring.
  • Slice the ring and serve warm with the sauce and sunny-side up eggs.

6 tablespoons/84 grams cold unsalted butter, cut into cubes, plus more for greasing the pan
1 1/2 cups/208 grams all-purpose flour
2 teaspoons granulated sugar
2 teaspoons baking powder

Steps:

  • Make the biscuits: Position a rack in the center of the oven and heat the oven to 425 degrees. Butter a small baking sheet. (Keep the cubed butter cold.)
  • Whisk together the flour, sugar, baking powder and salt in a large bowl. Add the cold butter and toss to coat, then cut the butter into the flour using a pastry cutter or rub and pinch it in with your fingers until the mixture resembles coarse sand with no bits larger than the size of gravel.
  • Add the milk all at once and quickly stir with a fork until the dough comes together in a shaggy mass. Use the fork to scoop and drop 4 even mounds of dough onto the prepared sheet, spacing apart. Gently pat the tops and sides to form round pucks; it's OK if the tops are a little craggy.
  • Bake until golden brown, 20 to 23 minutes. Let cool on the pan on a rack while preparing the fillings.
  • Make the fillings: Beat the eggs in a medium bowl until well mixed but not frothy. Season very generously with salt and pepper and beat again. Heat a medium nonstick or well-seasoned cast-iron skillet over medium until hot, 2 to 3 minutes. Add the butter, turn the heat to low and swirl the butter to evenly coat the bottom of the pan. When the butter has melted about halfway, add the eggs all at once. Cook, stirring gently, until mostly set but still a little wet, 1 to 2 minutes, then spread in an even layer.
  • Once the bottom and edges are fully set, turn off the heat and cut the egg pancake in quarters using the spatula. Set a slice of cheese over each quarter. Slice each of the biscuits in half and spread jam on both halves. If you want bacon, sausage or ham, place them over the bottom halves. Slide the cheesy egg quarters over the bottom halves (or meat) and fold over any corners that stick out. Sandwich with the top halves and serve warm.
