This is my own recipe, and I don't measure, so adjust the quantities to suit your tastes. These are small because my kids are little and not big eaters, so one is enough for a child or an adult who is a light eater. A serving size for an adult is two wraps.

12 eggs (or equivalent egg substitute)
8 ounces low-fat milk
12 slices turkey bacon
1 1/2 cups shredded cheddar cheese
12 low-carb whole wheat tortillas (8-inch)
salt and pepper
cooking spray

Steps:

  • Cook bacon in a pan or on a greased rack over a sheet pan in the oven at 350 until done.
  • Mix eggs (or egg substitute) with milk.
  • In a large pan over medium heat, coat with cooking spray and scramble eggs. Allow them to cook until they are moist and tender but not dry. Add salt and pepper to taste. Allow to cool.
  • To assemble, lay a tortilla flat, place one scoop of scrambled eggs, 2 tbs of shredded cheddar cheese, and one slice of bacon (I use a 1/4" measuring cup). Roll into shape.
  • OAMC: Assemble wraps while contents are still warm. Wrap with waxed paper and allow to cool. Place into resealable bags, label, refrigerate or freeze.
  • To reheat: Place wrap with waxed paper into microwave for 30 seconds on high, more if needed as microwave ovens vary greatly in power.

1 loaf white bread
16 ounces cream cheese
1 cup blueberries
1 cup strawberry
1 cup raspberries
12 eggs
2 cups milk
1/3 cup honey
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Steps:

  • Trim crusts off the bread and cut into cubes.
  • Cut cream cheese into i/2 inch cubes.
  • Spray a 13x9 inch baking pan with non stick baking spray.
  • Arrange 1/2 of bread cubes in the bottom of the pan.
  • Top with 1/2 of the cream cheese cubes, mixing the layers somewhat (you do not want smooth layers).
  • Mix all berries together and pour on top.
  • Top with remaining cream cheese and then ending with remaining bread cubes.
  • In large bowl beat together remaining ingredients.
  • Pour entire mixture on top.
  • This can be frozen as is or baked at 350 degrees for 30 minutes and then frozen. Be sure to wrap and label before freezing.
  • To reheat:
  • from raw: thaw in fridge overnight then bake as directed above.
  • from baked: cover with oven proof lid and bake at 375 degrees for 30-45 minutes or until completely warmed through.
  • Serve with your favourite syrup.

3 cups frozen hash brown potatoes (24 oz bag)
3/4 cup shredded monterey jack cheese
3/4 cup shredded cheddar cheese
1 cup diced ham
1/4 cup sliced green onion
6 beaten eggs or 1 1/2 cups frozen fat-free liquid egg product
1 (12 ounce) can evaporated milk
1/4 teaspoon pepper
1/8 teaspoon salt

Steps:

  • Grease a 2 quart square baking dish.
  • arrange potatoes evenly on bottom of dish.
  • sprinkle with cheese, ham, green onion.
