1/2 pound mild pork sausage
1/2 pound bulk spicy pork sausage
1-1/2 cups diced fresh mushrooms
1/2 cup chopped onion
3 large eggs, divided use
2-1/2 cups shredded mozzarella cheese
1 teaspoon dried basil
1 teaspoon dried parsley flakes

Steps:

  • Cover dough and let rise in a warm place until doubled. Preheat oven to 350°. In a large skillet, cook sausage, mushrooms and onion over medium-high heat until sausage is no longer pink, breaking up sausage into crumbles, 6-8 minutes. Drain. 2 extra-large egg yolks
2 1/2 cups half-and-half
1/3 cup honey
1 1/2 teaspoons pure vanilla extract
2 teaspoons orange zest (2 oranges)

Brioche loaf
1/2 cup golden raisins
Maple syrup, to serve

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, whisk together the whole eggs, egg yolks, half-and-half, honey, vanilla, orange zest, and salt. Set aside.
  • Slice the brioche loaf into 6 (1-inch) thick pieces. Lay half brioche slices flat in a 9 by 14 by 2-inch oval baking dish. Spread the raisins on top of the brioche slices, and place the remaining slices on top. Make sure that the raisins are between the layers of brioche or they will burn while baking. Pour the egg mixture over the bread and allow to soak for 15 minutes, pressing down gently.

I absolutely adore the egg souffles at Panera Bread, but often I get there and the souffles are all sold out. Here is a lower calorie version that I made up and one that is a clone from the internet for those of us that need to satisfy that desire for those wonderful creations.

3 eggs
2 Tbsp milk or half n half
1 Tbsp heavy cream
1/4 c shredded swiss cheese
1 Tbsp shredded parmesan cheese
shredded parmesan cheese for topping
1/4 tsp salt
black pepper to taste (opt)
1/4 c ham or canadian bacon (more if desired)
1-8 oz tube pillsbury crescent butter flake dough
melted butter

Steps:

  • 1. Preheat oven to 375 degrees. Mix the 3 eggs, milk and heavy cream. Add the Parmesan cheese and salt and blend thoroughly. Either microwave at 30 second intervals or cook on stovetop until a sort of runny scrambled egg consistency. Remove from heat. Add ham and stir.
  • 2. Unroll the dough and pinch 2 triangles together and roll to fit into a 4 inch ramekin. (Can use flour to roll out). Do again for second ramekin.
  • 3. Brush melted butter insides of two 4 inch ramekins and line with the dough. Fill the ramekins with equal amounts of filling of egg mixture. Sprinkle tops with parmesan cheese. Fold over the overhanging dough so it is no longer hanging over the sides of the ramekins. Can brush with a beaten egg, if desired. Bake 25 to 30 minutes or until dough is brown and crusty. Cool 5 minutes and enjoy!
  • 4. I make a lower fat version using reduced fat Pillsbury Crescent rolls, 1/2 cup liquid eggs, Fat free half and half instead of milk and heavy cream, one to two Laughing Cow Swiss wedges, and 97% fat free ham. I like to use full fat Parmesan cheese. Spray the ramekins with butter flavored cooking spray instead of using melted butter. I pile it into one ramekin just for me and savor every bite (adjust baking time)! Of course I like the full fat the best, but this isn't all that bad.
  • 5. SPINACH/ARTICHOKE: 3 Tbsp frozen spinach, thawed, 3 tbsp minced artichoke hearts, 2 tsp minced onion, 1 tsp minced red pepper, 1/4 c shredded cheddar cheese, 1/4 c shredded monterey jack cheese. (Instead of ham and swiss cheese) Top with 1/4 cup shredded Asiago Cheese
  • 6. Spinach and Bacon: use 4 pieces of cooked and crumbled bacon instead or artichoke hearts in the Spinach/Artichoke recipe.

1/2 cup granulated sugar, plus
1 tablespoon granulated sugar, for yeast mixture
1 cup water, about 110F
1 cup milk, warmed
1/2 cup butter or 1/2 cup margarine, melted

6 1/2 cups flour
3 eggs, beaten
fruit (of your choice-sliced apples, apricots, peaches, berries, or seedless grapes are all good)
1 egg, beaten
2 tablespoons granulated sugar
1 cup sour cream, thickened with a little flour (a tablespoon or two should do it)
1/2 cup butter, melted
3/4 cup granulated sugar
2 cups flour

Steps:

  • Dissolve yeast and 1 tablespoon sugar in lukewarm water.
  • In a separate bowl, combine milk with sugar, butter and salt; let cool to lukewarm and add 2 cups of flour to make a batter.
  • Add yeast mixture and eggs; beat well.
  • Add remaining flour or enough to make a soft dough.
  • Knead well, cover and let rise till doubled in bulk, about 2 hours (depending upon the temperature in the kitchen).

This unique Yemenite bread, which is baked all night in a tightly covered dish, is prepared for Sabbath breakfast or brunch. It defies all the usual rules for bread baking--it bakes at a very low temperature rather than at high heat, and it is baked covered, so it steams, rather than uncovered. And it is absolutely delicious. When I prepared this for a cooking class on Jewish breads in California, the students were wild about it. Before baking, you can put a few eggs (in their shells) in the baking dish; they come out brown and are a good accompaniment for the bread. In some families, this bread is served with sugar for sprinkling; in others, it is accompanied by Yemenite Tomato Salsa and Hot Pepper-Garlic Chutney.

1 envelope active dry yeast
1/3 cup lukewarm water
6 tablespoons sugar, plus
1 teaspoon sugar
1 1/2 teaspoons salt

3 cups all-purpose flour
1/2 cup very soft margarine or 1/2 cup butter, for spreading on dough

Steps:

  • Sprinkle yeast over lukewarm water and add 1 teaspoon sugar.
  • Leave for 10 minutes until yeast is foamy.
  • In a mixing bowl, combine remaining sugar, salt, 5 tablespoons margarine, and boiling water.
  • Stir until sugar and margarine is completely dissolved.
  • Stir in yeast mixture.
  • Add flour and mix with a wooden spoon until dough becomes difficult to stir.
  • Knead in remaining flour.
  • Knead dough vigorously on a lightly floured work surface, adding flour by tablespoons if necessary, until dough is very smooth but still soft, about 10 minutes.
  • Put dough in a clean, oiled bowl, cover with a damp cloth, and let rise in a warm place for 1 hour or until nearly doubled in volume.
  • Punch down dough, knead it briefly in bowl, cover, and let rise again in a warm place for about 1 hour; or refrigerate for 3 to 4 hours.
  • Generously rub a deep 2-quart baking dish with margarine or butter.
  • Divide dough into 8 pieces.
  • With a lightly oiled rolling pin, roll out one piece on a lightly oiled surface to a rectangle about 1/8 inch thick.
  • Spread with about 2 teaspoons of butter or margarine.
  • Roll up like a jelly roll.
  • Flatten resulting roll by tapping it with your knuckles and spread it with about 1 teaspoon butter, then roll up a spiral and place it in baking dish so that spiral design faces up.
  • Continue with remaining pieces of dough, placing them one next to the other and touching each other in dish.
  • If any margarine or butter remains, put it in small pieces on top.
  • Cover with greased paper or foil placed on surface of dough and with a tight lid.
  • Preheat oven to 225 degrees.
  • Bake 3 hours or until golden brown.
  • Turn out onto a plate, then reverse onto another plate and put back into baking dish, so it is now upside down.
  • Cover and bake another hour; or reduce oven temperature to 200 degrees and bake overnight.
  • (Bread can be baked ahead and reheated in its covered baking dish for about 45 minutes in a 225 degree oven.) Serve warm.

1 tablespoon salt
30 g yeast (or a 1/4 ounce packet)
1 tablespoon sugar
125 g melted and cooled butter
650 -700 ml milk
1 egg yolk, thinned with

  • Mix together all ingredients except egg yolk to make a soft dough. Knead 10 minutes or so.
  • Divide into 4 and make long sausages with the dough.
  • Form the sausages into 2 square crosses.
  • Plait each cross, using a 4 strand plait, so that you end up with two loaves of plaited bread.
  • Put in the fridge until ready to bake- overnight, for example.
  • Paint the loaves with a little of the egg yolk.

This is a recipe that I clipped from the newspaper. I modified it by changing the topping. The original recipe called for 1 cup of low-fat granola, but I switched it to a topping like you would find on an apple crisp. Use any type of bread. I used 2 wheat & 2 egg hamburger buns from the freezer.

1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt

1/3 cup honey
4 tablespoons brown sugar
4 tablespoons flour
2 teaspoons cinnamon

  • Core and finely dice pears, but do not peel. Sift together flour, baking powder, salt and soda. Stir in wheat germ. Beat egg slightly and blend with milk, oil, and honey. Add to dry ingredients along with pears. Stir until mixed.

2 cups whole milk

6 large eggs
Kosher salt and freshly ground black pepper
2 cups grated cheese (I'm using Cheddar)
10 slices day-old bread, torn up (I'm using sandwich bread)
Maple syrup, for serving, optional

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with foil and set aside. Butter a large baking dish.
  • Heat a large saute pan over medium heat and add the oil. Add the bacon and cook until crisp, 3 to 4 minutes. Add the onion and cook until tender, another 4 to 5 minutes. Mix in the ham, then set aside to cool.
  • In a large bowl, whisk together the milk, paprika, chile flakes if using, eggs and some salt and pepper. Add the bacon, onion and ham mixture, stirring to combine. Fold in the Cheddar and bread, making sure the bread is soaked in the custard.
