1 teaspoon butter

4 large eggs, beaten

4 links breakfast sausage, cooked, thinly sliced
¾ cup cherry tomatoes, diced

Steps:

  • Heat broiler. Brush both sides of bread with oil and place on a large baking sheet. Toast bread under broiler on both sides.

3 plum tomatoes, seeded and chopped
1/3 cup crumbled feta cheese
1/4 cup sliced ripe olives
3 tablespoons minced fresh basil or 3/4 teaspoon dried basil
