Steps:

  • Preheat the oven to 375 degrees F.

1 lb ground pork
1 tablespoon McCormick® fresh sage, minced
1 teaspoon McCormick® fresh thyme, minced
2 tablespoons maple syrup
2 ½ teaspoons kosher salt
½ teaspoon McCormick® ground black pepper
1 teaspoon McCormick® Fennel Seeds, ground
1 teaspoon McCormick® Paprika
1 teaspoon McCormick® Garlic Powder
12 medium eggs
1 roma tomato, thinly sliced
flaky sea salt, to taste

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a large bowl, combine the ground pork, sage, thyme, maple syrup, salt, pepper, fennel, paprika, and garlic powder. Mix with your hands until evenly combined.
  • Divide the sausage mixture evenly between the wells of a 12-cup muffin tin. Using your fingers, press the mixture against the bottom and up the sides of the cups in an even layer that is flush with the tops of the cups.
  • Crack 1 egg into each sausage well, then top with tomato slice and season with flaky salt.
  • Bake for 30 minutes, or until the sausage is golden brown and cooked through and the egg is set. Remove from the oven and let cool slightly.
  • Serve immediately or cool completely and freeze for up to 1 month. To reheat, microwave the cups for x minutes, until warmed through.

1 cup whole oats
1 cup oat flour
1 teaspoon ground cinnamon
½ teaspoon allspice
½ teaspoon baking soda
½ teaspoon salt
2 large apples - peeled, cored, and chopped
¾ cup plain yogurt
2 eggs
½ cup brown sugar
¼ cup butter, melted
1 teaspoon vanilla extract
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Generously grease muffin cups or line with paper liners.
  • Combine oats, oat flour, cinnamon, allspice, baking soda, and salt in a large bowl. Add apples, yogurt, eggs, brown sugar, butter, and vanilla extract to oat mixture until batter is well mixed; fold in walnuts. Pour batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 25 minutes.

This is easy to make. I haven't tried yet, but think it could be frozen and reheated with good results. This is much better than ordinary sausage biscuits. I am going to try it with whole wheat next to see if that is even better. I adapted this from a cookbook put out by MIA-POW group.

1 lb sausage, browned and drained
1/2 lb cheddar cheese, grated
6 eggs, beaten
1 (8 count) package Pillsbury Grands refrigerated buttermilk biscuits

Steps:

  • Open the biscuits (I used Grands, but others would do) and pull each apart into two halves. Press the dough into pre-sprayed muffin pans bringing up the edges to the top. The jumbo muffin size works well.
  • Mix other ingredients together and spoon into each biscuit.
  • Bake in 350 oven until golden brown.

2 cups broccoli floret, minced
1 cup shredded cheddar cheese
7 eggs
5 strips bacon, cooked and diced
1 large red onion
1 teaspoon salt
½ teaspoon pepper
½ teaspoon chili powder
2 tablespoons milk
grated parmesan cheese, to taste

Steps:

  • Heat oven to 400˚ (200˚C).
  • Mix eggs, milk, and spices in large mixing bowl.
  • Add broccoli, bacon, and cheese, and continue mixing until all ingredients are well incorporated.
  • Cut ends off the red onion and then slice in half. Gently pop out rings, using desired size.
  • Heat cast-iron pan on low and place onion rings in the pan.
  • Spoon in small amount of egg mixture and press on the onion ring create a seal, then repeat for all rings.
  • Pour the remaining mixture filling to just about the top of each ring.
  • Cover with foil.
  • Place in oven and cook for 25 minutes, or until eggs are cooked through and slightly puffed and onion rings are tender.
  • Remove from pan immediately and sprinkle with desired topping. (We used grated parmesan cheese.)
  • Enjoy!
