MOM'S CHICKEN CACCIATORE

Mom's Chicken Cacciatore image

When Valerie Bertinelli was growing up, chicken cacciatore was a standard weeknight dinner. It's one of many recipes she learned from her mom, Nancy, over the years. "I've been making it so long, I don't remember when I started!" she says. Using just one pot makes for an easy cleanup, and though her mom originally incorporated the whole chicken, Valerie's version calls only for thighs. "They're more forgiving, especially for beginners.

BREANNE'S CHICKEN CACCIATORE

Breanne's Chicken Cacciatore image

I made this from "Offerings From the Oven" --cookbook I received from my swap partner, BB502. I made using skin-on/bone-in large chicken thighs, using full sauce and seasonings, for 2 thighs. having 3+ hours time in the oven, reminded me of an old "I Hate to Cook Book" recipe, made frequently when we were first married. Chicken is done to falling off the bone, served with penne.

MY ITALIAN GRANDFATHER'S CHICKEN CACCIATORE

My Italian Grandfather's Chicken Cacciatore image

Favorite recipe handed down to me by my Italian grandfather Alfredo Marchese aka "Pop." Loved when we cooked this together while listening to the opera! Serve with polenta or spaghetti, spooning sauce over all. This was my Italian grandfather's sauce for game (mostly rabbit) but I love it for chicken. Mangia!

Tips:

  • Use a large skillet or pot for this recipe. You want plenty of room to brown the chicken and vegetables.
  • Don't overcrowd the skillet. If you do, the chicken and vegetables won't brown properly.
  • Be patient when browning the chicken. It takes a few minutes to get a nice golden crust.
  • Use a combination of vegetables in this dish. Whatever vegetables you have on hand will work, so feel free to get creative.
  • Add a splash of white wine or chicken broth to the skillet before adding the tomatoes. This will help to deglaze the pan and add flavor to the sauce.
  • Simmer the sauce for at least 30 minutes. This will allow the flavors to meld and develop.
  • Serve chicken cacciatore over rice, pasta, or mashed potatoes.

Conclusion:

Chicken cacciatore is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover chicken. The combination of tender chicken, flavorful sauce, and colorful vegetables makes this dish a winner. So next time you're looking for a quick and easy meal, give chicken cacciatore a try. You won't be disappointed.
