This salad is ready in minutes and is terrific as a side dish for lunch or a picnic. If you like your broccoli to be softer, you can boil it for 2 minutes and put it in ice water right away to cool it down. I did not include the 1 hour refrigeration time. Enjoy!

Time 5m

Yield 6-8 serving(s)

Number Of Ingredients 6

1/3 cup low-fat mayonnaise
4 teaspoons cider vinegar
1 1/2 teaspoons sugar
4 cups broccoli florets
1/3 cup red onion, diced
1/4 cup sliced almonds, toasted

Steps:

  • Whisk mayonnaise, cider vinegar and sugar in a medium bowl.
  • Stir in broccoli and red onion. Toss until coated.
  • Refrigerate at least 1 hour. Sprinkle with toasted almonds.

Tips:

  • Choose fresh, crisp broccoli: Look for broccoli with tightly closed florets and a deep green color. Avoid broccoli with yellow or wilted florets.
  • Blanch the broccoli: Blanching the broccoli helps to preserve its color and crunch. To blanch the broccoli, bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes, or until they are bright green and tender-crisp. Drain the broccoli and immediately transfer it to an ice bath to stop the cooking process.
  • Use a variety of nuts: This recipe calls for almonds, but you can use any type of nuts that you like. Some other good options include walnuts, pecans, or pistachios.
  • Make the dressing ahead of time: The dressing for this salad can be made ahead of time and stored in the refrigerator for up to a week. This makes it a great option for busy weeknights.
  • Serve the salad immediately: This salad is best served immediately after it is made. The dressing will start to wilt the broccoli if it sits for too long.

Conclusion:

This broccoli almond salad is a healthy and delicious side dish that is perfect for any occasion. It is packed with nutrients and flavor, and it is sure to be a hit with everyone who tries it. So next time you are looking for a healthy and refreshing salad, give this broccoli almond salad a try. You won't be disappointed!
