1 (12 ounce) box macaroni shells and cheese, box dinner
1 (10 3/4 ounce) can condensed broccoli cheese soup, undiluted (or can use cream of broccoli)
1/4 cup milk
12 ounces albacore tuna in water, drained and flaked
10 ounces frozen chopped broccoli, thawed
1/4 cup chopped onion
1/2 teaspoon garlic powder
2 -3 tablespoons butter, melted
1/3 cup breadcrumbs

Steps:

  • Prepare shells and cheese dinner according to package direction; drain but do not rinse.
  • Return cooked shells to hot pot.
  • Add in liquid cheese packet (from the shells & cheese dinner), condensed soup, milk, tuna, thawed broccoli, onion and garlic powder.
  • Gently stir to mix well.
  • Pour into a casserole dish.
  • In a small bowl, mix together melted butter and breadcrumbs.
  • Sprinkle the buttery breadcrumbs on top of the casserole.
  • Bake; uncovered for 25-30 minutes.

4 tablespoons salted butter, plus more for the baking dish
1 pound elbow macaroni
1 stalk celery, finely diced
1/2 head broccoli, stalks largely removed, broken into very small florets
1/2 medium onion, finely diced
2 tablespoons all-purpose flour
1 teaspoon dry mustard
2 cups whole milk
1 cup chicken or vegetable broth
1/4 cup half-and-half
2 1/2 cups grated sharp Cheddar
1 cup cubed processed cheese, such as Velveeta
1 cup grated Parmesan
Kosher salt and freshly ground black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 350 degrees F. Butter a baking dish.
  • Bring a pot of water to a boil. Cook the macaroni according to the package instructions until still firm. Drain and set aside.
  • Meanwhile, melt the butter in a pot over medium heat. Add the celery, broccoli and onion and cook, stirring, until the vegetables soften, 4 to 5 minutes. Use a wooden spoon to mash some of the broccoli. Sprinkle on the flour and dry mustard and stir to coat the vegetables. Pour in the milk, broth and half-and-half and cook, stirring, to allow it to warm up.
  • Add the Cheddar, processed cheese, 1/2 cup of the Parmesan and some salt and pepper and stir to melt the cheese. Add the macaroni and stir. Taste and check for seasoning. Pour into the prepared baking dish. Combine the breadcrumbs and remaining 1/2 cup Parmesan in a small bowl and sprinkle over the dish. Bake until bubbly, about 25 minutes.

12 reduced-fat round buttery crackers, coarsely crushed (about 1/3 cup)

Steps:

  • Heat oven to 350ºF.
  • Cook pasta as directed on package, omitting salt and adding broccoli to the boiling water for last 3 min.; drain. Combine pasta with tuna, cheddar cheese and mustard in large bowl.
  • Mix reduced-fat cream cheese and milk in microwaveable bowl until blended. Microwave on HIGH 2 to 3 min. or until cream cheese is melted and mixture is well blended, stirring every 30 sec. Add to tuna mixture; mix lightly.

This dish is super easy. It is also a very hearty delicious bowl of comfort food. The guys in my house loved it. I loved this recipe but I used cream of mushroom soup and added the cheese into the casserole. I also melted butter and added bread crumbs to the top before baking, then sprinkle top lightly with dill seasoning. The resulting casserole was very creamy and flavorful.

5 cups uncooked whole wheat egg noodles
1 teaspoon butter
1/4 cup chopped onion
1/4 cup cornstarch
2 cups fat-free milk
1 teaspoon dried basil
1 teaspoon dried thyme

1 cup reduced-sodium chicken broth
1 cup shredded Monterey Jack cheese, divided
4 cups frozen broccoli florets, thawed
2 pouches (6.4 ounces each) albacore white tuna in water
1/3 cup panko bread crumbs
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions; drain. Transfer to a shallow 3-qt. or 13x9-in. baking dish coated with cooking spray. , Meanwhile, in a large nonstick skillet, heat butter over medium-high heat. Add onion; cook and stir until tender. I know the processed Kraft mac 'n cheese powder isn't the healthiest (chemicals), but it sure is cheap, and I actually like it better in tuna casserole than regular shredded cheese. I toss in a bunch of veggies, so I don't feel as guilty... ;-) The added veggies also help stretch the amount of food. I "eyeball" the amount of veggies, but the amounts listed below should be pretty close to what I use.

1 tablespoon reduced fat margarine

1/4 cup frozen corn
2 (6 ounce) cans tuna, drained

1 (7.25 ounce) package macaroni and cheese dinner mix (such as Kraft®)
¼ cup butter
¾ cup milk
1 (10.5 ounce) can condensed cream of chicken soup
1 (15 ounce) can sweet peas, drained
1 (5 ounce) can chunk light tuna, drained and flaked
1 cup shredded mild Cheddar cheese
1 ⅓ cups French-fried onions

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with nonstick spray.
