CRUST
2 c all purpose baking mix
1 c cold water
1/2 c shredded cheese
FILLING
1-1/2 lb ground beef
1/2 c chopped onion
2 c mushrooms, fresh (chopped coarsely)
2 - 1/2 c cheddar cheese, shredded
1 box broccoli, frozen
TOPPING
1/2 c milk
1/4 c parmesan cheese, grated
4 medium eggs
1 tsp salt
1 dash(es) pepper

Steps:

  • 1. Preheat oven to 400 degrees
  • 2. Spray 9 X 13" baking dish with non-stick cooking spray
  • 3. Grate 3 cups of cheddar cheese and thaw 1 pkg of frozen broccoli
  • 4. Mix crust ingredients together and pat into baking dish and up the sides about 1/4"
  • 5. Brown ground beef then add rest of ingredients for filling
  • 6. Pour beef and cheese mixture over crust and even out with a spatula
  • 7. Sprinkle frozen broccoli evenly over top of beef mixture
  • 8. Beat together topping ingredients and pour over beef mixture
  • 9. Bake for 25 - 30 minutes until edges are golden brown
  • 10. Cut into squares and serve. Great leftover and easy to freeze

Tips:

  • Choose the right broccoli: Look for broccoli florets that are deep green and tightly closed. Avoid florets that are yellowed or have brown spots.
  • Cut the broccoli florets into uniform pieces: This will help them cook evenly.
  • Don't overcook the broccoli: Overcooked broccoli will be mushy and lose its bright green color. Cook it just until it is tender-crisp.
  • Use a good quality beef: Sirloin or flank steak are both good choices for this recipe.
  • Slice the beef thinly: This will help it cook quickly and evenly.
  • Marinate the beef: Marinating the beef in a mixture of soy sauce, rice wine, and cornstarch will help to tenderize it and add flavor.
  • Use a hot skillet: A hot skillet will help to sear the beef and prevent it from sticking.
  • Don't overcrowd the skillet: If you overcrowd the skillet, the beef will not cook evenly.
  • Stir-fry the beef quickly: Stir-fry the beef over high heat until it is just cooked through. Overcooking the beef will make it tough.
  • Add the broccoli and sauce: Add the broccoli and sauce to the skillet and stir-fry until the broccoli is tender-crisp.
  • Serve immediately: Broccoli beef squares are best served immediately.

Conclusion:

Broccoli beef squares are a quick and easy stir-fry that is perfect for a weeknight meal. The beef is tender and flavorful, and the broccoli is crisp and tender. The sauce is slightly sweet and savory, with a hint of heat. This dish is sure to please everyone at the table.
