1 cup chopped onion
1 cup butter, cubed
2 packages (8-1/2 ounces each) cornbread/muffin mix
2 cups shredded cheddar-Monterey Jack cheese
6 large eggs
1-1/2 cups 4% cottage cheese
1 package (9 ounces) frozen broccoli cuts, thawed and drained
1 cup fresh or frozen corn, thawed
2 tablespoons canned jalapeno slices, chopped

Steps:

  • In a large skillet, saute onion in butter until tender; set aside. In a large bowl, combine cornbread mix and shredded cheese. In another bowl, beat the eggs, cottage cheese and onion mixture. Stir into cornbread mixture just until moistened. Fold in the broccoli, corn and jalapeno. , Transfer to a greased 13x9-in. baking pan. Bake at 400° for 35-40 minutes or until lightly browned and edges pull away from sides of pan. Serve warm. Refrigerate leftovers.

1 6.5 oz container light garlic-herb spreadable cheese (i.e. Boursin or Alouette)
4 large eggs
1/2 cup butter (melted)
1 small sweet onion (finely diced)
2 cups shredded sharp white cheddar cheese (divided)
1 8.5 oz box cornbread mix [Martha White or Jiffy]
1/2 tsp garlic powder
1/2 tsp dry mustard
1/4 tsp onion powder

Steps:

  • Preheat the oven to 350°F and butter a 11 x 7 inch (2 Quart) baking dish. Set aside.
  • In a mixing bowl, mix together, the steamed broccoli, garlic-herb cheese spread, 4 eggs, melted butter and finely diced onion until blended.

1/2 cup whole milk
2 cloves minced garlic
1 (8-ounce) container cottage cheese

1 stick unsalted butter or margarine
1 medium onion, chopped
1 (10-ounce) package frozen chopped broccoli, thawed but not drained

1/2 cup chopped sweet onion, such as Vidalia
10 ounces pepper Jack cheese, grated
8 ounces fresh broccoli florets, chopped (about 2 cups)
1/2 teaspoon freshly ground black pepper
1 jalapeno pepper, seeded and chopped
1 cup sour cream
3/4 cup buttermilk
2 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 350 degrees F. Pour the vegetable oil in a 9-inch cast-iron skillet that has been well seasoned to prevent sticking.
  • Combine the cornbread mix, onion, cheese, broccoli, black pepper and jalapeno in a large bowl. Stir in the sour cream, buttermilk and melted butter to make a thick batter.
