BROCCOLI CHEESE BAKE

Broccoli Cheese Bake image

This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!

Time 50m

Yield 6 , 4-6 serving(s)

Number Of Ingredients 15

2 cups macaroni (one box)
1 (10 ounce) package frozen chopped broccoli
1 1/2 cups 1% low-fat milk
4 tablespoons sour cream (or plain yogurt)
4 tablespoons flour
1 tablespoon 1% low-fat milk (yes, you need an extra tablespoon in addition to the 1.5 cups)
1/2 teaspoon Season-All salt
1 teaspoon mustard powder
3 dashes garlic powder
3 dashes turmeric
3/4 cup extra-sharp cheddar cheese, shredded
1 1/4 cups extra-sharp cheddar cheese, shredded
3 tablespoons unsalted butter
3 dashes Season-All salt
1 cup panko breadcrumbs

Steps:

  • Boil about 2 quarts of salted water in a pot, and cook the macaroni for 4 minutes. Add the frozen broccoli and cook for another 5 minutes.
  • If you're like me and get absentminded of what's in your freezer and how long it's been in there thus your broccoli is REALLY freezer-burnt, throw it in the pot when you put the macaroni inches Make sure it's a big enough pot.
  • When they're all done cooking, remove and drain the macaroni and broccoli. Put them into a 2.5-quart baking dish, mixing well.
  • Pour the milk into the pot and let it come to a low boil. Meanwhile, preheat the oven to 350°F.
  • While waiting for the milk to heat up, combine the sour cream, tablespoon of milk, flour, and spices in another bowl to make a paste.
  • Add this paste to the boiled milk, and stir thoroughly.
  • When the mixture becomes thick, add 3/4 cup of cheese and it should melt on impact. Stir again to fully incorporate the cheese.
  • Pour the cheese sauce over the macaroni and broccoli, blending well. Top evenly with the 1 1/4 cups cheese.
  • For the panko topping, melt the butter in a frying pan or saucepan and toss with the panko flakes until nice and toasty. Put over the cheese.
  • Bake for 30 minutes.

ONE-POT BROCCOLI MAC AND CHEESE

One-Pot Broccoli Mac and Cheese image

In the time it takes to make boxed macaroni and cheese, you can have a homemade version that's creamy with lots of sharp Cheddar, studded with broccoli and doesn't require making a roux. Instead, the sauce is thickened by the pasta's starch: As the noodles cook in milk, the milk thickens to the consistency of cream and the pasta absorbs the seasonings. Here, that's garlic powder, but you could also use mustard powder, ground cayenne or grated nutmeg like in traditional mac and cheese. The broccoli pieces end up soft and sweet, but if you want more bite, add them halfway through cooking.

Time 25m

Yield 4 servings

Number Of Ingredients 7

1 pound elbow macaroni
1 pound broccoli, stem and florets coarsely chopped
2 1/2 cups whole milk
2 teaspoons kosher salt, plus more to taste
1/2 teaspoon garlic powder
8 ounces coarsely grated sharp Cheddar (about 2 cups)
Black pepper

Steps:

  • In a large pot or skillet, combine the macaroni, broccoli, milk, salt and garlic powder. Add 3 cups of water, and stir to combine. (The pasta may not be fully submerged. That's OK!) Bring to an active simmer over medium-high. Reduce the heat to medium to gently simmer. Cook, stirring often to ensure even cooking and to keep things from sticking to the bottom of the pot, until the pasta is tender, and the liquid resembles heavy cream and coats the noodles, 8 to 12 minutes. If the liquid evaporates so much that you don't see any between noodles, add 1/2 cup water. Adjust the heat as needed to maintain a gentle simmer.
  • Remove from heat and stir in the Cheddar. Season to taste with salt and pepper. Eat!

Tips:

  • Choose the right type of macaroni. Elbow macaroni is the classic choice for mac and cheese, but you can also use other shapes, such as shells, penne, or rotini. Just make sure that the macaroni is cooked al dente, or slightly firm to the bite.
  • Use a good quality cheese. The type of cheese you use will make a big difference in the flavor of your mac and cheese. Use a sharp cheddar cheese for a classic flavor, or experiment with other types of cheese, such as Gruyère, Parmesan, or Gouda.
  • Make a roux. A roux is a mixture of butter and flour that is used to thicken the cheese sauce. It will help to prevent the sauce from becoming too thin or runny.
  • Season the sauce to taste. Add salt, pepper, and other spices to taste. You can also add a bit of mustard powder or paprika for extra flavor.
  • Don't overcook the broccoli. Broccoli should be cooked just until it is tender-crisp. Overcooked broccoli will become mushy and lose its flavor.
  • Serve immediately. Mac and cheese is best served hot and fresh out of the oven. You can also make it ahead of time and reheat it in the oven or microwave.

Conclusion:

Broccoli mac and cheese is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to get your kids to eat their vegetables. With a few simple tips, you can make a broccoli mac and cheese that is sure to be a hit with everyone at the table.
