Time 55m

Yield 4 serving(s)

Number Of Ingredients 5

4 -5 potatoes, sliced
1 head broccoli, florets, blanched
1 (10 1/2 ounce) can broccoli cheese soup
1 (10 1/2 ounce) can milk, approx, to cover
shredded cheese

Steps:

  • This easy recipe freezes well if prepared with cooked potatoes and reheated in the oven.
  • In a casserole, put a few (4-5) sliced potatoes, the florets from a head of broccoli (blanched), a can of cream of broccoli and cheese soup, and enough milk to make the soup cover the veggies.
  • Throw in a handful or two of shredded cheese.
  • Cover, label and freeze.
  • It tastes like a broccoli-n- cheese baked potato.
  • Bake this in the oven for about 40 minutes.
  • For crockpot: use raw potatoes and cook for 2-3 hours or till done on high.
  • Freeze after cooking.

Tips:

  • Choose the right potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape better than starchy potatoes, like Russet potatoes, and are less likely to fall apart during baking.
  • Cut the potatoes into uniform-sized pieces: This will help them cook evenly.
  • Don't overcrowd the pan: Give the potatoes and broccoli some space so that they can cook evenly.
  • Season the potatoes and broccoli well: Use a combination of salt, pepper, garlic powder, and onion powder.
  • Bake the potatoes and broccoli until they are tender: The potatoes should be fork-tender and the broccoli should be bright green and slightly crisp.
  • Top the potatoes and broccoli with cheese: Use a sharp cheddar cheese or a combination of cheeses, such as cheddar, Parmesan, and mozzarella.
  • Broil the potatoes and broccoli until the cheese is melted and bubbly: Keep a close eye on the potatoes and broccoli so that they don't burn.

Conclusion:

Broccoli potato bake is a classic comfort food dish that is easy to make and can be enjoyed by people of all ages. It is a versatile dish that can be served as a main course or a side dish. With its cheesy, creamy sauce and tender potatoes and broccoli, it is sure to be a hit at your next gathering.
