2 tablespoons olive oil
2 tablespoons butter
3 large leeks, chopped
1 onion, chopped
3 stalks celery, chopped

3 Yukon Gold potatoes, cubed

½ teaspoon ground coriander
½ teaspoon fennel seed, crushed

3 cups broccoli florets
2 ½ cups whole milk
3 green onions, chopped

Steps:

  • Stir the bacon and olive oil in a large pot over medium heat until the bacon has turned golden brown and released its grease, about 7 minutes. Add the butter, leeks, onion, and celery. Cook and stir until the leeks have softened, about 7 minutes.
  • Pour in the chicken stock, potatoes, herbes de Provence, coriander, fennel, salt, and pepper. 2 heads broccoli (about 2 pounds), separated into small florets, stems peeled and diced

This is a low-fat recipe I got out of one of my moms weight watchers cookbook and I've been making it for years. The DH loves it and it's great to make on cold days and fine for big portions. SPECIAL NOTE: This soup can easily be modified. Add more ham and cheese if you'd like, or add cubed chicken or Turkey instead of ham. If you add more veggies and need more water to boil them, use 2 bouillon cubes to every cup of water you add and 2 Tablespoons of Flour to every cup of milk to thicken it up. I serve the soup with Cheddar Cheese Popovers. NOTE: If you are doing the 2012 version of WW, it has 11 points per serving as written.

  • 2 heads fresh broccoli, cut into florets can be used instead of the frozen broccoli.

1 pound broccoli, coarse stems discarded, cut into 1-inch flowerets and remaining stems peeled and sliced thin

Steps:

  • Peel potatoes and cut into 1-inch pieces. In a 4-quart saucepan boil potatoes, garlic, and water, skimming froth, until potatoes, are very tender, about 15 minutes.
  • Set broiler rack about 1 inch from heat and preheat broiler.
  • While potatoes are boiling, in a bowl sprinkle bread with oil and salt to taste and toss. On a baking sheet arrange bread in one layer as close together as possible and sprinkle with half of Parmesan. Broil bread until Parmesan is melted, about 1 minute.
  • Transfer potatoes with a slotted spoon to a bowl, reserving cooking liquid in pan, and with a potato masher mash coarse. 1/2 cup chopped onion
1 small head of broccoli (separated)
1 sweet potato (chopped)
1 medium zucchini (diced)
6 cups chicken broth
3 teaspoons Cremora
1/2 teaspoon celery seed
1 pinch nutmeg
1/4 teaspoon basil
1/4 teaspoon tarragon
1/2 teaspoon cumin
salt and pepper
3/4 cup instant instant potato flakes
1 cup cream

Steps:

  • Note before you start; the basil, tarragon, and cumin are added to taste--keep tasing till you get it the way you want it.
  • Break up the broccoli into flowerettes and simmer alone in another pan; set aside.
  • Cover the bottom of a large pot with butter and saute onions till golden, but not brown.
  • Add the sweet potato and zucchini.
  • Stir till veggies are hot and then cover with the chicken stock.
  • Put a colander down into the pot of liquid so that the liquid is up through the holes.
  • Measure the stock because this determines how much Creamora to put in (1 teaspoon of Creamora to 1 cup of liquid) and with a whisk, whisk in the Cremora.
  • Add the celery seed, nutmeg, basil, tarragon, cumin, salt and pepper.
  • Bring to a boil.
  • Add the Potato Buds to the colander whisking all the time till it is thick.
  • Then gently take out the colaner and stir. You can use more or less depending on the thickness that you like.
  • Add the cream for extra richness (or a small can of evaporated milk would also do).
  • Then add the broccoli using as much as you like.

2 cups chopped onion
2 tablespoons margarine
2 ½ pounds peeled and cubed potatoes
5 cups boiling water
4 cubes chicken bouillon
3 cups fresh broccoli, cooked and drained
salt and pepper to taste
3 cups shredded Cheddar cheese

Steps:

  • In a large stock pot saute onion in butter. Add potatoes, water and bouillon cubes. Cover, bring to boil and then reduce heat to medium and cook until potatoes are tender, about 15 minutes.
  • Remove tough outer skin of broccoli stems and cook broccoli. Once cooked add to soup.
  • In a blender or food processor puree half of the soup and return to stock pot. Season with salt and pepper.
  • Add cheese and heat soup through until cheese is melted. Serve warm.

2 tablespoons olive oil
4 tablespoons butter
1 teaspoon parsley
1 medium onion, chopped
garlic clove, pressed or minced
4 large potatoes, baked, then chunked (baking size)
1 cup broccoli floret, chopped
6 cups broth, veggie or 6 cups chicken
2 cups milk
3 tablespoons chickpea flour (all purpose is fine if you cannot find)
1 cup Velveeta cheese, chunked or 1 cup cheddar cheese, shredded

Steps:

  • Heat oil, melt butter.
  • Soften onion & garlic in the blend, 8-10 minute
  • Add parsley, potato, broccoli, and broth.
  • Bring to a boil, simmer 30 minute
  • Whisk milk and flour in separate bowl, set aside.
  • Smash 1/3-1/2 of the potatoes with potato masher.
  • Blend in milk mix, then add velveeta and melt.
  • Turn off burner, and allow soup to thicken, about 5 minutes.

2 cups chicken broth
3 cups ham, cubed
3 cups frozen chopped broccoli
3 cups milk
1/4 cup flour
8 ounces Velveeta cheese, cubed
4 ounces cream cheese, cubed

shredded cheese
sour cream
crouton

Steps:

  • In a large soup pot, combine the potatoes and chicken broth. Bring to a boil. Reduce heat to medium; cover and cook 4 to 5 minutes or until potatoes are tender.
  • Stir in the ham and broccoli and simmer for another 5 minutes. Mix the milk and flour together until blended. Add the milk to to pot and simmer for 15 minutes, stirring occasionally. Do not boil!
