3/4 lb Italian sausage, casings removed
3 green onions, chopped (or use a small yellow onion)
2 cups fresh broccoli florets, cooked and drained
1 1/2 cups cheddar cheese, shredded and divided
8 large eggs, lightly beaten
1 pinch cayenne pepper
1 cup ricotta cheese
1/4 cup milk
seasoning salt (or use white salt)
black pepper
1/3 cup grated parmesan cheese
2 firm plum tomatoes, thinly sliced
