Number Of Ingredients 9

4 cups broccoli florets
3 garlic cloves, minced
1/2 cup low sodium chicken broth
3 tablespoons sake
2 tablespoons low sodium soy sauce
2 tablespoons oyster sauce
1 tablespoon cornstarch
2 teaspoons sugar or 2 teaspoons Splenda sugar substitute
1 tablespoon oil (for cooking)

Steps:

  • Combine broth, sake, soy sauce, oyster sauce, cornstarch and sugar in a bowl & set aside.
  • Heat a large nonstick wok or skillet over medium heat; add oil. Once the oil is warm, add garlic and stir-fry until fragrant. Add the broccoli (and any other vegetables if desired) and stir-fry for 3 minutes or so, until slightly tender. Add the sauce mixture and stir constantly until sauce boils and thickens. Serve once sauce and broccoli reach desired thickness and tenderness.

1 head garlic, peeled (about 16 cloves)
1 cup good olive oil
1 teaspoon crushed red pepper flakes
1 teaspoon kosher salt
4 stalks broccoli, cut into florets (8 cups of florets)
2 tablespoons soy sauce

Steps:

  • Put the garlic cloves and oil in a small heavy-bottomed saucepan. Bring to a boil and cook uncovered over low heat for 10 to 15 minutes, until the garlic is browned and tender. Turn off the heat and add the red pepper flakes and 1/2 teaspoon salt. Immediately pour into a heat-proof container to stop the cooking. Allow to cool to room temperature.
  • For the salad, blanch the broccoli florets in a large pot of boiling salted water for 2 to 3 minutes, until crisp-tender. Drain well and immerse immediately into a large bowl of ice water until the broccoli is cooled. This process stops the cooking and sets the bright green color. Drain well.
  • In a large bowl, toss the broccoli with 1/2 teaspoon salt, 1/4 cup of the oil used to cook the garlic, the soy sauce, and 8 or more cloves of cooked garlic. Taste for seasonings and serve cold or at room temperature.

1 lb beef sirloin steak
1 1/4 teaspoons cornstarch
1 teaspoon sesame oil
1/4 cup low sodium chicken broth
2 tablespoons vegetable oil
3 cups broccoli, cut into 1 inch chunks
1/2 cup carrot, very thinly sliced on diagonal
2 tablespoons onions, chunked (optional)
1/2 cup bok choy, sliced (optional)
1/2 cup yellow bell pepper, cut bite size
1/8 teaspoon pepper, taste test maybe more
1 1/2 teaspoons garlic, minced (or more)
1 teaspoon gingerroot, finely chopped
2 tablespoons fish sauce
1/4 cup water chestnut, sliced
soy sauce, to taste

Steps:

  • Trim fat from beef steak; cut beef lengthwise into 2 inch strips, and each strip cut crosswise into 1/8 inch slices.
  • In cup, mix cornstarch, sesame oil and broth, set aside.
  • Heat 12 inch skillet or wok until very hot.
  • Add vegetable oil; rotate skillet to coat bottom.
  • Add beef; stir fry 2 minutes or until beef is brown.
  • Remove beef from skillet.
  • Keep skillet hot.

4 cloves garlic, peeled
1 ½ teaspoons salt
1 bunch broccoli, cut into florets
⅓ cup olive oil
¼ cup red wine vinegar
1 tablespoon Dijon mustard
½ cup grated Parmesan cheese, or to taste

Steps:

  • Place garlic in a mortar dish or on a cutting board, and sprinkle with salt. Mash with a pestle, or use the flat side of a knife to mash garlic and salt into a paste. Transfer to a medium bowl, and stir in olive oil, vinegar, and mustard. Add the broccoli, and stir to coat. Chill for 3 hours to marinate, stirring occasionally. One of my favorite Middle Eastern mezze is deep-fried cauliflower served with tahini garlic sauce. I decided to try the dish with broccoli, but instead of deep-frying the broccoli I roasted it, a method that requires a lot less oil. The buds on the broccoli florets toast to a crispy brown, and the texture of the stalk remains crisp. It goes wonderfully with the classic and irresistible tahini garlic sauce.

1 garlic clove, cut in half, green shoots removed
Salt to taste
1/3 cup sesame tahini
2 to 4 tablespoons fresh lemon juice (more to taste)
1/3 cup water
Aleppo pepper or red pepper flakes for sprinkling
1 to 1 1/2 pounds broccoli crowns
2 tablespoons extra virgin olive oil
Salt and freshly ground pepper to taste

Steps:

  • In a mortar and pestle mash the garlic clove to a purée with a generous pinch of salt. Transfer to a bowl and whisk in the sesame tahini. Whisk in the lemon juice, beginning with the smaller amount. The mixture will stiffen up. Gradually whisk in up to 1/3 cup water, until the sauce has the consistency of thick cream (or runny yogurt). Taste and adjust salt.
  • Heat the oven to 450 degrees. Line a baking sheet with parchment paper. Slice the broccoli crowns 1/3 inch thick, letting the flower buds on the edges fall off. Peel any large pieces of stem by gently pulling away the thick skin, then toss the slices and the unattached buds with the olive oil, salt, and pepper. Place on the baking sheet in an even layer. Roast until the tops are nicely browned, stirring and flipping the large slices over (tongs are a good tool for this) after 8 minutes, roasting about 15 minutes total. Remove from the oven and transfer to a platter or to individual serving plates. Drizzle on the tahini sauce and serve, or serve the tahini sauce in small bowls for dipping.
