### **Broccoli with Cheddar Sauce: The Ultimate Guide** ### **** Broccoli with cheddar cheese is a classic American dish that is both delicious and nutritious. It is a perfect side dish for roasted chicken or grilled fish. If you are looking for a healthier option, you can also use low-quality cheddar cheese or cook the broccoli in a steamer to reduce the amount of fat. It is an ideal recipe for novice cooks who want to impress their dinner guests. ### **Choosing the Right Broccoli** * Select firm, deep-green florets with tight heads. * Smaller broccoli crowns tend to be more flavorful. * If possible, choose organic broccoli to avoid pesticides and fertilizers. ### **Preparing the Broccoli** * Trim the broccoli by cutting off the tough ends of the stalks. * Peel the remaining stalks if desired. * Chop the broccoli into 1-inch florets. * Wash the broccoli florets in a colander to remove any debris. ### **Cooking the Broccoli** * Bring a large pot of water to a boil and add a pinch of salt. * Once the water is boiling, add the broccoli and cook for 3-5 minutes or until the broccoli is bright green and crisp-tender. * Drain the broccoli in a colander and rinse with cold water to stop the cooking process. ### **Preparing the Cheddar Sauce** * In a medium saucepan over low heat, melt the butter. * Stir in the all-purpose and cook for 1 minute or until the mixture is smooth and bubbly. * Slowly whisk in the milk and bring to a simmer. * Add the cheddar cheese and whisk until melted. * Season with salt, black or white ground, and paprika. ### **Assembling the Dish** * Preheat the broiler to high. * Arrange the broccoli florets in a single layer in a greased casserole dish. * Pour the cheddar cheese mixture evenly over the broccoli. * Sprinkle with panko breadcrumbs (if using). * Broil for 3-5 minutes or until the cheddar cheese is melted and bubbly and the breadcrumbs are golden brown. ### **Garnish and Serving** * Garnish with fresh parsley or chives. * Serve immediately with roasted chicken, grilled fish, or a simple green. * Leftover broccoli with cheddar cheese can be stored in the refrigerator for 3-4 days. ### **Conclusion** Broccoli with cheddar cheese is a delicious and versatile dish that can be enjoyed as a side dish or as a main course. It is a perfect way to use up leftover broccoli and is also a great way to impress your dinner guests.
