ROASTED BROCCOLI WITH VINEGAR-MUSTARD GLAZE

Roasted Broccoli With Vinegar-Mustard Glaze image

On its own, roasted broccoli is a treat: caramelized and crisp-tender, with frizzled florets and sweet stems. To prevent overcooking, roast at a high heat and on one side the whole time. Flipping the broccoli to brown on both sides increases the chance that it will dry out or turn to mush before the outsides are as caramelized as you like. To give the broccoli a little pizzazz, this recipe takes inspiration from a classic mustard pan sauce, which makes chicken breasts or steaks sparkle. Toss the broccoli with butter, vinegar and Dijon mustard right out of the oven, and the heat from the sheet pan will meld them into a silky, bright sauce.

Kosher salt and black pepper
1 tablespoon unsalted butter
1 tablespoon sherry or red wine vinegar
1 teaspoon Dijon mustard

This vitamin and fiber packed vegetable is one you'll sure to love. I've topped mine with a skinny balsamic vinaigrette to add some pizzaz...

Tips:

  • Choose fresh, tender broccolini: Look for broccolini with bright green stalks and tightly closed florets. Avoid any bunches that are wilted or have yellowed leaves.
  • Trim the broccolini properly: Cut off the tough ends of the broccolini stalks. You can also peel the stalks if desired, but this is not necessary.
  • Blanch the broccolini before stir-frying: Blanching helps to preserve the broccolini's鮮豔色彩 and crisp texture. To blanch the broccolini, bring a large pot of salted water to a boil. Add the broccolini and cook for 1-2 minutes, or until the florets are bright green. Immediately transfer the broccolini to a bowl of ice water to stop the cooking process.
  • Use a hot wok or skillet: A hot wok or skillet will help to create a nice sear on the broccolini. If your wok or skillet is not hot enough, the broccolini will steam instead of stir-fry.
  • Stir-fry the broccolini in small batches: This will help to prevent the broccolini from becoming soggy. Cook the broccolini in batches until it is tender-crisp, about 2-3 minutes per batch.
  • Add the mustard dressing at the end of cooking: This will help to prevent the dressing from burning.
  • Serve the broccolini immediately: Broccolini is best served immediately after it is cooked. If you need to make it ahead of time, you can blanch the broccolini and store it in the refrigerator for up to 3 days. When you're ready to serve, simply reheat the broccolini in a hot wok or skillet with a little bit of oil.

Conclusion:

Broccolini with Mustard Dressing is a quick, easy, and delicious side dish that is perfect for any occasion. The broccolini is tender-crisp and flavorful, and the mustard dressing adds a tangy, slightly spicy kick. This dish is sure to please everyone at your table.
