MASTER RECIPE: BROWN RICE

Master Recipe: Brown Rice image

Unlike white rice, brown rice retains the nutritious bran and germ covering of the rice grain. This gives it a chewy texture, a nutty aroma, and plenty of essential nutrients. Follow our tried-and-true formula for perfectly fluffy brown rice every time.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains     Rice Recipes

Yield Makes about 2 1/2 cups

Number Of Ingredients 3

1 cup brown rice
1 1/4 to 1 1/2 cups water
1/4 teaspoon kosher salt

Steps:

  • The Right Ratio: Trust us: Though it's printed on the package, the standard 2-to-1 ratio makes mushy rice. For long-grain brown rice, use 1 1/4 cups water to 1 cup rice. For short-grain, use 1 1/2 cups water.
  • Quick Cooking Time: Bring rice, water, and salt (1/4 teaspoon per cup of rice) to a boil. Cover, and reduce to a slow, steady simmer. Many recipes call for 50 minutes, but we think 30 minutes is plenty. A wide, shallow pot with a tight-fitting lid ensures evenly cooked grains.
  • Steam and Fluff: Let the cooked rice sit for 10 minutes, covered, to absorb maximum moisture; then remove the lid, and fluff the grains with a fork.

SAFFRON RICE AND HAM PRIMAVERA

Saffron Rice and Ham Primavera image

Categories     Pork     Rice     Quick & Easy     Ham     Spring     Summer     Bon Appétit

Yield Serves 2; can be doubled

Number Of Ingredients 8

1 1/3 cups canned low-salt chicken broth
3/4 cup long-grain white rice
1/4 teaspoon crumbled saffron threads
3/4 cup frozen peas (unthawed)
1 1/3 cups diced ham
1 cup chopped yellow bell pepper
1 cup cherry tomatoes, halved
2 tablespoons (or more) bottled balsamic vinaigrette

Steps:

  • Bring broth, rice and saffron to boil in heavy medium saucepan over high heat. Reduce heat to low, cover and simmer 15 minutes. Place frozen peas atop rice mixture. Cover and cook until rice is tender, peas are cooked through and broth is absorbed, about 4 minutes longer. Meanwhile, heat heavy large skillet over high heat. Add ham and bell pepper and cook until ham begins to brown, stirring frequently, about 5 minutes.
  • Remove skillet from heat. Add rice mixture, tomatoes and 2 tablespoons vinaigrette. Toss, adding more vinaigrette by tablespoonfuls if mixture is dry. Season with salt and pepper. Serve warm or at room temperature.

Tips

  • Prep before you cook: Chop your veggies, measure your spices, and get all your ingredients ready before you start cooking. This will make the process go much more smoothly.
  • Cook your rice ahead of time: Brown rice takes longer to cook than white rice, so it's a good idea to cook it ahead of time. You can either do this the day before or in the morning before you start cooking dinner.
  • Use a variety of vegetables: The more colorful your vegetables, the more nutrients your dish will have. Try to use a mix of different colors and textures, such as broccoli, carrots, snap peas, and bell peppers.
  • Don't overcook your vegetables: Overcooked vegetables are mushy and bland. Cook them just until they are tender-crisp.
  • Add a flavorful sauce: A simple sauce can really elevate the flavor of your primavera. Try a sauce made with olive oil, lemon juice, garlic, and herbs.
  • Serve immediately: Primavera is best served immediately after it is cooked. The rice will start to absorb the sauce and the vegetables will lose their crunch if you let it sit for too long.

Conclusion

Brown rice primavera is a delicious and healthy dish that is perfect for a quick and easy weeknight meal. It's packed with vegetables, protein, and fiber, and it's low in calories and fat. Plus, it's a great way to use up leftover brown rice. So next time you're looking for a healthy and flavorful meal, give brown rice primavera a try.
