BROWN RICE PUDDING

Brown Rice Pudding image

Categories     Dairy     Egg     Rice     Dessert     Low Fat     Chill     Bon Appétit

Yield Serves 6

Number Of Ingredients 10

3 cups nonfat milk
1/2 cup short-grain brown rice
1/4 teaspoon salt
1/2 cup milk
3 eggs
1/4 cup sugar
2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon
1/4 cup raisins
1 tablespoon unsulfured molasses

Steps:

  • Bring nonfat milk, rice and salt to simmer in heavy medium saucepan. Reduce heat to low. Cover and gently simmer until rice is very tender and liquid is almost absorbed, stirring occasionally, about 1 1/2 hours.
  • Whisk milk, eggs, sugar, vanilla and cinnamon to blend in medium bowl. Stir in raisins. Gradually stir egg mixture into rice mixture. Stir over low heat until mixture is just thickened, about 6 minutes. Transfer to bowl. Stir in molasses. Cool. Refrigerate until well chilled.(Can be prepared 2 days ahead.)

Tips:

  • To make sure the raisins are plump and juicy, soak them in hot water for 15 minutes before adding them to the rice. Alternatively, for a boozy twist, you can soak the raisins in rum or orange juice for a fuller flavor.
  • For added texture and crunch, toast the nuts before adding them to the rice. This can be done in a pan over medium heat or in the oven at 350°F for 5-7 minutes, stirring occasionally.
  • If you want to add more vegetables to the dish, consider diced carrots, celery, or bell peppers. These will add color and nutrients to the rice.
  • Feel free to experiment with different types of rice. While brown rice is the traditional choice, you could also use white rice, basmati rice, or jasmine rice. Each type of rice will give the dish a slightly different flavor and texture.
  • If you don't have raisins on hand, you can substitute dried cranberries, cherries, or chopped apricots.

Conclusion:

Brown rice with raisins is a delicious and versatile dish that can be served as a side dish, main course, or even breakfast. It's easy to make and can be tailored to your own taste preferences. With its combination of complex carbohydrates, protein, and fiber, brown rice with raisins is a nutritious and satisfying meal that can be enjoyed by people of all ages.
