4 heaped tablespoons mayonnaise
1/4 iceberg lettuce (roughly shredded. I cut slices about ¼-inch thick first, and then roughly chop the lot.)
6 dill pickles (halved lengthwise, then sliced into 1/8-inch thick half-moons)
1 clove garlic (peeled and finely mashed or grated)
1 tablespoon fresh parsley (finely chopped, stalks and all)
1 tablespoon fresh lime juice (approximately the juice of 1/2 of a lime)
1 teaspoon ground sea salt
1 serrano pepper (halved lengthwise and cut into 1/4 inch slices)
1 1/2 pounds coarsely ground chuck steak (6 ounces for each patty.)
3 teaspoons Worcestershire sauce
2 sun-dried tomatoes
1 heaped teaspoon ground black pepper (I like it, but it really is optional)
Olive oil (for very lightly coating the patties just before they hit the heat.)
Ground sea salt (for sprinkling top and bottom on the lightly oiled patties - just before they hit the heat)

Steps:

  • Gently stir all the ingredients together in a mixing bowl. You might like to adjust the quantities - not too much - until you have a relish that perfectly suits your tastes.
  • If you like, keep a little of the parsley aside to sprinkle on the top of the relish as a summery green garnish.
  • Cold is cool. Ground chuck with a good fat content needs to stay cold so that the fat only starts to melt when your patty hits the heat. For the very little mixing that's needed, a steel bowl and wooden spoon will help keep the temperatures low.
  • So, tip all the ingredients - except the olive oil and salt - into a mixing bowl. Now gently, and I mean gently, stir the mix just enough to bring all the ingredients evenly together. Good. Time now to form your patties.
  • Divide the patty mix evenly into four. Gently hand-mould the mix into four patties that are no more than 3/4 inch thick and four inches in diameter.
  • What's really important here is to avoid compacting the patties too much. Use just enough hand pressure so that the mix holds together in somewhat flattish discs. A neat-edged, uniformly round shape is way less important than a lightly compacted patty.
  • Now pop them onto a plate and let them chill in the refrigerator for at least 10 minutes.
  • Heat the skillet* over a high heat for a minute or so until it's really hot. As that's happening, use your fingers to quickly spread a 1/4 teaspoon of olive oil over each patty's top and bottom. Now sprinkle a good pinch of salt over each oiled side. Grand. Your patties are heading for that hot, hot skillet right now.
  • Lay the patties into the skillet and let them sit on that searing heat for two minutes on each side. That will give you medium rare patties - each with a nicely charred, just slightly crunchy outside and a still just pinkish, juicy inside. Perfect. Don't be tempted to fiddle with the patties as they cook, just let them be for those two minutes each side.
  • Remove the patties and set them aside on a warm plate. It's time to put a little toasted color onto the buns. So, slice each bun through its waistline, and add all four tops - cut side down - to the skillet and turn the heat to high. Leave them on that heat for 90 seconds so they just pick up a little toasty golden colour. Done. Turn off the heat and remove the tops from the skillet.
  • Spread a generous layer of the relish onto the untoasted bottom of each bun. Lay a patty on top and then spread another kindly helping of relish onto the patty's top. That's it. Done! Serve at once with napkins.

10 ancho chilis, roasted at 350 for 4 to 5 minutes, seeded and ground to a powder, about 1/2 to 3/4 cup
4 tablespoons ground black pepper
3 tablespoons ground coriander seed
3 tablespoons kosher salt
2 tablespoons cumin powder
1 tablespoons sugar
1/4 cup extra virgin olive oil
8 ounce. ground buffalo
6 tomatillos out of husk
2 small red onions, peeled
2 seeded jalapenos
2 ripe Haas avocados, peeled, cubed
1 medium chopped red onion
2jalapenos, seeded and diced
Pinch salt
Pepper to taste
Juice of 3 limes, 1 lemon, 1/2 orange
4 large Idaho potatoes, peeled, sliced thin in processor or on a mandolin

Steps:

  • For the Rub and the Burger: Mix all dry ingredients. Reserve 2 tablespoons for the potato chips. Add olive oil to the remainder. Makes rub for 10 burgers. Can refrigerate for prolonged period of time. Shape ground buffalo into a patty. Rub burger with rub and let marinate for 30 minutes to 1 hour. Grill to desired doneness.
  • For the Salsa: Preheat oven to 400 degrees. Roast the tomatillos in greased pyrex dish for about 15 to 20 minutes. It's okay if they char.Chop all ingredients in processor with 1/4 cup, combined, lemon and lime juice, bunch of fresh cilantro and salt and pepper to taste.
  • For the Avocado Relish: Combine all ingredients and refrigerate until serving time.
  • For the Chips: Fry in peanut oil at 375 degrees until golden brown and crisp. Drain on paper towels pat. Add reserved 2 tablespoons dry rub and 2 tablespoons kosher salt. Season chips with salted rub.

1 cup white onion, chopped
2 cloves garlic, finely chopped
1 lb ground beef
14.5 oz crushed tomato
6 oz tomato paste
1 tablespoon light brown sugar, packed
1 teaspoon salt
½ teaspoon ground black pepper
1 teaspoon paprika
1 tablespoon chili powder
1 teaspoon ground cumin
½ cup water
2 ⅔ cups grated parmesan cheese
2 lb ground beef, divided into 8 patties
salt, to taste
pepper, to taste
1 cup shredded cheddar cheese
8 brioche burger buns

Steps:

  • Heat the olive oil in a large pot with a lid over medium heat until shimmering. Add the onion and garlic and sauté for 2 minutes, until translucent.
  • Add the ground beef and cook until browned, about 7-10 minutes.
  • Add the crushed tomatoes, tomato paste, brown sugar, salt, ground pepper, paprika, chili powder, ground cumin, and stir to combine. Add water and stir. Bring to a boil, then reduce the heat to low, cover, and simmer for 30 minutes.
  • Set a wire cooling rack on top of a baking sheet. Place a metal 1-cup (240 ml) measuring cup upside down on top of the cooling rack.
  • In a medium non-stick skillet over medium heat, pour ⅓ cup (35 g) of Parmesan in the center of the pan and spread out into a thin circle, about 5 inches across. Without disturbing the cheese, melt for 2-3 minutes, or until golden and fully melted.
  • Once the cheese is fully melted, run a spatula along the edges of the cheese and shake the pan to loosen the cheese circle. Carefully slide the melted cheese over the inverted measuring cup to form a cheese bowl. DO NOT TOUCH, it is extremely hot. Set aside and let cool completely, about ten minutes. Repeat with the rest of the Parmesan to make 8 bowls.
  • Lightly grease a large skillet over high heat, then add the beef patties (in batches, if necessary) and season generously with salt and pepper. Cook for 2 minutes without disturbing, then flip and cook for another 3 minutes, or until the internal temperature has reached at least 165˚F (75˚C).
  • To assemble, place a bottom burger bun on a plate and put a cheese bowl on top. Lay a burger patty inside the cheese bowl and top with a spoonful of chili, a sprinkle of shredded cheddar cheese, and the top bun.

1 lb ground beef, not lean
1/4 cup flour, plus
1 1/4 cups flour
1 1/3 cups beef broth
4 cups water
3 teaspoons chili powder
2 tablespoons grated then chopped fine carrots
1 tablespoon white vinegar
2 tablespoons dried onion flakes
2 teaspoons salt
1 teaspoon granulated sugar
1 teaspoon paprika
1/4 teaspoon garlic powder

Steps:

  • In a large saucepan brown meat over medium heat, crumbling as you cook.
  • Pour meat in to a strainer over a bowl.
  • Reserve 1/2 cup fat and return meat to saucepan.
  • In a medium saucepan heat fat over medium heat.
  • When hot whisk in the 1/4 cup flour.
  • Reduce heat to medium low, and continue to cook until a rich caramel color is reached, around 15 minutes.
  • Add beef broth and whisk well.
  • Remove from heat.
  • In the meat saucepan add water to the cooked beef.
  • Whisk in remaining flour.
  • Add the roux/broth and remaining ingredients.
  • Heat to medium high stirring often.
  • Once a gentle boil is reached, reduce to medium low and simmer for 20 minutes, again, stirring often.
  • Remove from heat and let stand 30 minutes to thicken.
