BUCKWHEAT CINNAMON PANCAKES
These pancakes are still fluffy like all wheat pancakes, the only thing different is their color. The cinnamon adds a nice touch that fits very well with maple syrup or pumpkin butter. These would probably also be very good with the addition of a chopped apple into the batter. From Cooking Light magazine

Steps:
- In a large bowl, stir together the flours, baking powder, and cinnamon until evenly blended.
- Add the vanilla, egg replacer, apple sauce, and water.
- Stir until"just mixed".
- Portion out about 3/4 to 1 cup of batter onto hot non-stick pan or lightly oiled frying pan and cover with a lid.
- Let sit on medium heat until the center starts to bubble and become sturdy.
- Flip pancake over and cook on other side until golden brown.
- Repeat process until all the batter is gone.
Tips:
- Choose the right buckwheat flour: For the best results, use finely milled buckwheat flour. This will give your pancakes a smooth and tender texture.
- Use buttermilk: Buttermilk gives buckwheat pancakes a slightly tangy flavor and helps to tenderize them. If you don't have buttermilk on hand, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of regular milk and letting it sit for 5 minutes.
- Don't overmix the batter: Overmixing the batter will make your pancakes tough. Mix the batter just until the ingredients are combined and there are no lumps.
- Use a nonstick skillet: A nonstick skillet is essential for making buckwheat pancakes. This will prevent the pancakes from sticking to the pan and breaking.
- Cook the pancakes over medium heat: Cook the pancakes over medium heat so that they have time to cook through without burning.
- Serve the pancakes immediately: Buckwheat pancakes are best served immediately after they are cooked. This will ensure that they are light and fluffy.
Conclusion:
Buckwheat cinnamon pancakes are a delicious and healthy breakfast option. They are easy to make and can be enjoyed by people of all ages. With their nutty flavor and fluffy texture, buckwheat cinnamon pancakes are sure to be a hit with your family and friends.
