5 pounds boneless beef chuck, cut into 1 1/2-inch cubes
Kosher salt and freshly ground black pepper
3 tablespoons vegetable oil
One 6-ounce can tomato paste
2 onions, chopped
3 cups beef broth
Two 12-ounce bottles ale
3 tablespoons soy sauce
1 bay leaf
1 pound small beets, peeled and halved
1 pound Brussels sprouts
1 pound carrots, chopped
1 pound parsnips, chopped
1 pound small red potatoes, halved

Steps:

  • Season the beef with some salt and pepper. Heat the oil in a large Dutch oven over medium-high heat. Add the beef and cook until well-browned on all sides. Stir in the tomato paste and cook for 1 minute.
  • Stir in the onions and cook, stirring occasionally, until softened and browned. Add the beef broth, ale, soy sauce and bay leaf. Bring the stew to a simmer, then reduce the heat to medium-low, cover, and cook, stirring occasionally, until the meat is starting to get tender and the liquid is slightly reduced, about 1 1/2 hours.
  • Add the beets, Brussels sprouts, carrots, parsnips and red potatoes, and cook, covered, stirring occasionally, until the meat and vegetables are tender, about 1 more hour. Remove the bay leaf before serving.

3 bacon strips, diced
2 pounds beef stew meat, cut into 1-inch cubes
1/2 teaspoon pepper
1/4 teaspoon salt
2 tablespoons canola oil
2 cups fresh baby carrots
1 medium onion, cut into wedges
1 teaspoon minced garlic
1 bay leaf
1 can (12 ounces) beer or nonalcoholic beer
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
2 tablespoons all-purpose flour
1/4 cup water
Hot cooked noodles
Chopped fresh parsley, optional

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, discarding drippings. Sprinkle beef with pepper and salt. In the same skillet, brown beef in oil in batches; drain., Transfer to a 5-qt. slow cooker. Add the carrots, bacon, onion, garlic and bay leaf. In a small bowl, combine the beer, soy sauce, Worcestershire sauce and thyme. 3 sweet potatoes, with skin

2 1/2 lb onions, sliced
About 1/2 cup canola oil
2 garlic cloves, finely chopped
1/3 cup all-purpose flour
2 teaspoons salt
1 teaspoon black pepper
3-lb boneless beef chuck, cut into 1 1/2-inch cubes
1 1/2 tablespoons soy sauce
1 1/2 tablespoons Worcestershire sauce
1 1/2 tablespoons steak sauce
2 bay leaves
2 teaspoons dried thyme
1 1/2 to 2 (12-oz) bottles of beer (not dark)
1 tablespoon light brown sugar (optional)
Garnish: chopped fresh flat-leaf parsley
Accompaniment: cooked potatoes, rice, or noodles

Steps:

  • Cook onions in 2 tablespoons oil in a 6- to 8-quart ovenproof heavy pot over moderate heat, stirring frequently, until lightly browned, about 30 minutes. Add garlic and cook, stirring, 5 minutes.
  • Preheat oven to 325°F.

Here's one that I found that we really liked....it's quick and easy and perfect after a day of fishing when the husband, once again, catches no fish! Adapted from a Sunset recipe.

2 large onions, chopped
2 teaspoons vegetable oil
3/4 lb mushroom, thinly sliced
1 lb ground buffalo meat or 1 lb extra lean ground beef
2 (13 ounce) cans tomatillos
1 (15 1/2 ounce) can hominy, drained
1 (15 ounce) can baby corn, drained
1/4 cup chopped fresh cilantro
1 teaspoon dry oregano leaves
5 small dried hot red chiles

Steps:

  • In a 5-6 quart pan over medium heat, combine onions and 1 tablespoon of the oil; stir often until onions are light golden and sweet to taste, about 20 minutes.
  • Add mushrooms and stir occasionally until liquid evaporates, about 10 more minutes; remove from pan, set aside.
  • Add remaining 1 tablespoon oil to pan along with buffalo; stir frequently over high heat until meat is well browned and crumbly, about 10 minutes.
  • Return onion mixture to pan along with tomatillos (break them up with a spoon) and their liquid; stir to free up the browned bits.
  • Add hominy, corn, cilantro, oregano and chiles; bring to a boil; reduce heat, cover and simmer for about 15 minutes, stirring occasionally to blend flavors.
  • If you're making this ahead of when you'll serve it, let it cool at this point then cover and refrigerate until the next day.
  • Reheat to serve and REMOVE and discard the HOT CHILES before serving, unless you like getting a'jolt'.

22 oz bottle of Alaskan Smoked Porter
1 cup water
1 cup V-8 juice
3 large carrots, angle sliced into bite sized pieces
3 small celery stalks, chopped
2 medium turnips, diced
8 medium red potatoes, cubed
1 large onion, coarsely chopped
1 cup frozen peas
1 package of French's beef stew seasoning mix
Olive oil

  • 1. Dredge meat pieces in flour and brown in olive oil in a large stewpot. 2. Add beer, water, onion, seasoning mix, and V-8 juice. 3. Cook for an hour at a low boil. 4. While meat is cooking, clean and cut up vegetables and potatoes to bite size. 5. Add turnips carrots and celery to the stewpot. Bring to boil again, and then reduce simmer and continue cooking for 1/2 hour stirring intermittently. 6. Once the carrots have begun to soften a bit, add the potatoes and continue cooking until the potatoes are done to taste. 7. Add peas and heat through. 8. Don't eat it yet! Cool and store in fridge overnight. Then the next day, transfer stew to a crock pot and heat on low all day. 9. Serve with crusty bread and cold Alaskan beer!
