1 tablespoon extra-virgin olive oil
2 tablespoons butter
2 pounds ground chicken breast
1 large carrot, peeled and finely chopped
1 large onion, chopped
3 stalks celery, finely chopped
5 cloves garlic, chopped
5 tablespoons chili powder
2 tablespoons ground cumin
1 tablespoon ground paprika
salt and pepper to taste
½ cup hot buffalo wing sauce (such as Frank's® REDHOT Buffalo Wing Sauce), or to taste
2 (15 ounce) cans tomato sauce
1 (15 ounce) can crushed tomatoes
1 (15 ounce) can white kidney or cannellini beans, drained
1 (19 ounce) can red kidney beans, drained

Steps:

  • Heat olive oil and butter in a large pot over medium-high heat. Place chicken in the pot. Cook and stir 7 to 10 minutes, until chicken is no longer pink. 1 1/2 pounds boneless, skinless chicken thighs, trimmed of excess fat and cut into 1/2-inch chunks
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
4 cloves garlic, chopped
2 stalks celery, chopped
1 medium onion, chopped
2 tablespoons chili powder
2 teaspoons ground cumin or 1/2 teaspoon cumin seeds
3 cups reduced-sodium chicken broth
Two 15.5-ounce cans great Northern beans, rinsed and drained
One 14.5-ounce can fire-roasted diced tomatoes
One 8-ounce can tomato sauce
1/4 to 1/3 cup Buffalo-style hot sauce, plus more for serving
1/4 cup mayonnaise
1/4 cup sour cream
1 teaspoon cider or white wine vinegar
1/4 teaspoon garlic powder
1/3 cup crumbled blue cheese
1 scallion, white and green parts separated, sliced

Steps:

  • For the chili: Sprinkle the chicken with 1/2 teaspoon salt and several grinds of black pepper. Heat the oil in a large Dutch oven over medium-high heat.
