From: "Whole Grains Every Day, Every Way" by Lorna Sass. Adapted from a Jewish dessert. "It is a Sephardic pudding (alternately called prehito, moustrahana, and belila) that is common among the Jews of Turkey, who serve it to celebrate the fall holiday of Sukkot." "This dessert cooks in a flash and can be served warm or chilled. Leftovers make a delicious breakfast."

Time 55m

Yield 4 serving(s)

Number Of Ingredients 8

2 tablespoons olive oil
4 ounces mushrooms, assorted
1 onion, chopped
2 garlic cloves, chopped
1 medium zucchini, diced
3 ounces bulgur wheat
3/4-1 cup vegetable broth
1 tablespoon flat leaf parsley, roughly chopped

Steps:

  • Heat oil in large pan over medium-high heat.
  • Slice mushrooms.
  • Add onion, garlic and mushrooms to pan.
  • Saute for about 2 minutes.
  • Add the zucchini and wheat, stirring for 3-4 minutes.
  • Add broth.
  • Cover and let simmer over low heat for about 25 minutes.
  • Remove from heat but don't remove the cover.
  • Allow to sit for about 20 minutes.
  • Fluff and sprinkle with parsley.

Tips:

  • Choose bulgur that is finely ground, as it will cook more evenly and have a smoother texture in the pudding.
  • Soak the bulgur in hot water for at least 15 minutes before cooking. This will help to soften the bulgur and make it more digestible.
  • Use a heavy-bottomed pot to cook the bulgur. This will help to prevent the bulgur from sticking to the bottom of the pot and burning.
  • Bring the bulgur and water to a boil, then reduce the heat to low and simmer for 15 minutes, or until the bulgur is tender and all of the water has been absorbed.
  • Once the bulgur is cooked, remove it from the heat and let it cool slightly.
  • Add the honey, dates, nuts, and spices to the cooled bulgur and stir to combine.
  • Pour the bulgur mixture into a greased baking dish and bake for 30 minutes, or until the pudding is set and golden brown.
  • Serve the pudding warm or at room temperature.
