35 g (2 Tbsp) tomato paste
15 g (1 Tbsp) turkish hot pepper paste (acı biber salçası)
200 ml (⅘ cup) boiling water
200 g (1 cup) fine bulgur (köftelik bulgur)
6 spring onions, finely sliced
250 g (2 medium size) tomatoes, cut into small cubes
40 g flat-leaf parsley (without thick stalks), finely chopped
6 Tbsp (90 ml / ⅓ cup) extra virgin olive oil
2 Tbsp pomegranate molasses
1 tsp pul biber (Aleppo pepper), or other chili flakes to taste
salt and pepper

Steps:

  • Mix the tomato paste, hot pepper paste (if using) and boiling water until completely mixed. Stir in the bulgur. Set aside until the bulgur has softened and cooled a little, 10-20 minutes.
  • Mix the bulgur with the remaining ingredients. Season with salt and pepper to taste.

1 medium cooking onion, chopped and sauteed
2 cups bulgur (add 4 cups of boiled water in a bowl and set aside)
3 freshly squeezed lemons
1/2 cup finely chopped parsley
1 large tomatoes, diced
1/4 teaspoon cumin
1/4 teaspoon coriander
1/4 teaspoon paprika
1 cup quartered red seedless grapes or 1 cup quartered green seedless grape
1/4 cup extra virgin olive oil

1 cup Bulgar wheat (Bob's Red Mill Light Bulgur Wheat is good)
1 cup boiling water
1 1/2 tablespoons olive oil
1 tablespoon lemon juice
1 cup fresh Italian parsley (1/2 bunch, chopped)
1/4 cup fresh mint leaves (chopped)
1 large roma tomato (seeded and diced)
2 green onions (chopped)
1/2 teaspoon salt
black pepper (to taste)
cayenne pepper (to taste)
4 teaspoons red pepper paste (or Ajvar)

Steps:

  • Mix bulgur and water and set aside for 30 minutes, until all of the water is absorbed. (There is a special kind of bulghur used in Turkish Kisir, but any bulgur or cracked wheat that can be prepared in this way will work).
  • Add remaining ingredients, adding the red pepper paste last. (Trader Joe's makes Red Pepper Spread with Eggplant and Garlic, which works pretty well. The Turkish spread is called Ajvar (Ayvar/Hayvar/Havyar), and it is much more spicy).
