1 pound bacon
4 cups all-purpose flour
2 cups shredded Cheddar cheese
2 tablespoons baking powder
1 teaspoon garlic salt
½ teaspoon ground black pepper
2 eggs
2 cups milk
½ cup vegetable oil

Steps:

  • Cook bacon in a large skillet over medium-high heat until crisp, about 10 minutes. Drain the bacon slices on paper towels and crumble once cooled.
  • Preheat oven to 400 degrees F (200 degrees C). Coat 24 muffin cups with cooking spray.
  • Mix flour, Cheddar cheese, baking powder, garlic salt, and black pepper together in a large bowl.
  • Beat eggs, milk, and vegetable oil together in a small bowl; stir into flour mixture just until moistened. Gently fold bacon through the batter. Spoon batter into prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 15 to 20 minutes. Serve warm.

6 bacon strips, diced
2 cups biscuit/baking mix
2 tablespoons sugar
1 egg
2/3 cup milk

Steps:

  • Preheat oven to 400°. Cook bacon over medium heat until crisp; drain. , Meanwhile, in a large bowl, combine biscuit mix and sugar. In a small bowl, combine egg and milk. Stir into dry ingredients just until moistened. Fold in bacon. , Fill greased muffin cups three-fourths full. Bake 13-15 minutes or until a toothpick inserted in the muffin comes out clean. Serve warm. Freeze option: Wrap cooled baked muffins in plastic wrap; transfer to a resealable plastic freezer bag. May be frozen up to 3 months. To use, remove plastic wrap. Thaw at room temperature. Warm if desired.

6 slices bacon
2 cups flour
2 teaspoons baking powder
2 tablespoons sugar
3/4 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons oil

Steps:

  • Grease 12 muffin cups.
  • Preheat oven to 400 degrees.
  • Cook bacon in a pan until crisp, then chop into small pieces.
  • Mix together flour, baking powder, sugar, and salt.
  • In a seperate bowl mix egg, milk, and oil.
  • Add all at once to the dry ingredients along with bacon until just combined.
  • Mixture will look somewhat lumpy but do not mix more.
  • Fill the muffin cups 2/3rds of the way full.
  • Bake@ 25 minutes.

6 thick slices bacon
2 cups all-purpose flour
1 ½ tablespoons white sugar
2 teaspoons baking powder
¼ teaspoon salt
1 ½ teaspoons garlic powder
4 teaspoons dried chives
⅓ cup grated Parmesan cheese
1 cup shredded sharp Cheddar cheese
1 egg, beaten
½ cup milk
½ cup cream of mushroom soup
½ cup vegetable oil

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease muffin pan.
  • In a large mixing bowl, combine flour, sugar, baking powder, salt, garlic powder, chives, parmesan cheese, cheddar cheese and crumbled bacon. Combine the egg, milk, cream of mushroom soup and vegetable oil. Mix into the dry ingredients and stir together just to moisten.

7 -8 slices smoked bacon (thin slices)
2 cups all-purpose flour (10 oz./315 g)
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 large egg
4 tablespoons unsalted butter, melted (2 oz./60 g)
1 cup milk (8 fl. oz/250 ml)
2 tablespoons sour cream or 2 tablespoons plain yogurt
3/4 cup finely diced gruyere (3 oz./90 g) or 3/4 cup swiss cheese (3 oz./90 g)

Steps:

  • Preheat oven to 400 F (200 C). Grease 9 standard muffin cups with butter or spray; fill unused cups one-third with water to prevent warping.
  • In a frying pan over medium-high heat, cook bacon slices until crisp, 6-8 minutes, turning as needed. Set aside on paper towels to drain. Let cool, then crumble and set aside.
  • In a bowl, stir together flour, sugar, baking powder, and salt.
  • In another bowl, whisk together egg, melted butter, milk, and sour cream until blended. Add egg mixture to dry ingredients and stir just until evenly moistened; batter will be slightly lumpy.
  • Using a rubber spatula, fold in bacon and cheese just until evenly distributed, no more than a few strokes. Do not overmix.
  • Spoon batter into each muffin cup, filling it level with the rim of the cup.
  • Bake until golden, dry, and springy to the touch, about 20 to 25 minutes. A toothpick inserted into the center of a muffin should come out clean.
  • Transfer pan to a wire rack and let cool 5 minutes; unmold the muffins. Serve warm or at room temperature.
  • Notes: For added bacon flavor, replace 2 tablespoons melted butter with 2 tablespoons of the bacon fat. If not serving immediately, store muffins in the refrigerator to avoid rancidity.
  • These pair well with soup, salad, or omelets.
