1 (450 g) package basmati rice
1 tablespoon butter
1 1/2 tablespoons canola oil
1 kg chicken thigh fillet, cut into 3 cm pieces
1 onion, finely chopped
1 tablespoon finely grated fresh ginger
2 garlic cloves, crushed
2 teaspoons ground cumin
1 teaspoon ground cardamom
1 teaspoon coriander powder
1 teaspoon garam masala
1/4 teaspoon chili powder
1 1/4 cups tomatoes, puree*
3 teaspoons cornflour
1/2 cup thickened cream
1/2 cup greek style natural yoghurt
50 g baby spinach leaves
salt, to taste
1/4 cup toasted sliced almonds, to serve

Steps:

  • Heat butter and 1 tablespoon of the oil in a large heavy based saucepan. Cook the chicken in batches until browned. Transfer to a bowl.
  • Reduce heat and add remaining oil. Add onion and cook, stirring occasionally, for 5 minutes or until soft.
  • Add ginger, garlic and spices. Cook, stirring, until fragrant (about 30 seconds).
  • Add tomato puree and chicken (including juices). Simmer 10 minutes, stirring occasionally.
  • Place cornflour in a small bowl. Stir in 1 tablespoon cream and set aside. Add remaining cream and yoghurt to chicken mixture - stir to combine.
  • Simmer 10 minutes, stirring occasionally. Add cornflour mixture and stir for 1 minute longer or until thickened.
  • Add spinach and stir just until wilted. Season with salt.
  • Cook rice as per directions on pack. Serve butter chicken with rice and top with flaked almonds.

This is a recipe I have perfected over the years and passed onto many others. The sauce is perfect when creamy and not too thick or too thin. The level of salt and spices can be suited to your taste. Garam and tandoori masala can be found in the ethnic aisle of your grocery store.

1 cup butter, divided
1 onion, minced
1 tablespoon minced garlic
1 (15 ounce) can tomato sauce
3 cups heavy cream
2 teaspoons salt
1 teaspoon cayenne pepper
1 teaspoon garam masala
1 ½ pounds skinless, boneless chicken breast, cut into bite-sized chunks
2 tablespoons vegetable oil
2 tablespoons tandoori masala

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt a few tablespoons of butter in a skillet over medium heat. Stir in onion and garlic, and cook slowly until the onion caramelizes to a dark brown, about 15 minutes.
  • Meanwhile melt the remaining butter in a saucepan over medium-high heat along with the tomato sauce, heavy cream, salt, cayenne pepper, and garam masala. Bring to a simmer, then reduce heat to medium-low; cover, and simmer for 30 minutes, stirring occasionally. Then stir in caramelized onions.
  • While the sauce is simmering, toss cubed chicken breast with vegetable oil until coated, then season with tandoori masala and spread out onto a baking sheet.
  • Bake chicken in preheated oven until no longer pink in the center, about 12 minutes. Once done, add the chicken to the sauce and simmer for 5 minutes before serving.

Butter chicken is a great, ever-evolving, cross-continental dish found in Delhi, London, New York, Perth and most points in between. In its purest form, it is yogurt-and-spice-marinated chicken dressed in a velvety red bath comprising butter, onions, ginger and tomatoes scented with garam masala, cumin and turmeric, with a cinnamon tang. This version was adapted from Amandeep Sharma, a young kitchen hand at the restaurant Attica, in Melbourne, Australia, who used to make it for staff meal. It is wildly luxurious. Serve with basmati rice and mango chutney, with papadums or naan if you can find them, with extra rice if you cannot.

1 1/2 cups full-fat Greek yogurt
2 tablespoons lemon juice
1 1/2 tablespoons ground turmeric
2 tablespoons garam masala
2 tablespoons ground cumin
3 pounds chicken thighs, on the bone
1/4 pound unsalted butter
4 teaspoons neutral oil, like vegetable or canola oil
2 medium-size yellow onions, peeled and diced
4 cloves garlic, peeled and minced
3 tablespoons fresh ginger, peeled and grated or finely diced
1 tablespoon cumin seeds
1 cinnamon stick
2 medium-size tomatoes, diced
2 red chiles, like Anaheim, or 1 jalapeño pepper, seeded and diced
Kosher salt to taste
2/3 cup chicken stock, low-sodium or homemade
1 1/2 cups cream
1 1/2 teaspoons tomato paste
3 tablespoons ground almonds, or finely chopped almonds
1/2 bunch cilantro leaves, stems removed.

Steps:

  • Whisk together the yogurt, lemon juice, turmeric, garam masala and cumin in a large bowl. Put the chicken in, and coat with the marinade. Cover, and refrigerate (for up to a day).
  • In a large pan over medium heat, melt the butter in the oil until it starts to foam. Add the onions, and cook, stirring frequently, until translucent. Add the garlic, ginger and cumin seeds, and cook until the onions start to brown.
  • Add the cinnamon stick, tomatoes, chiles and salt, and cook until the chiles are soft, about 10 minutes.
  • Add the chicken and marinade to the pan, and cook for 5 minutes, then add the chicken stock. Bring the mixture to a boil, then lower the heat and simmer, uncovered, for approximately 30 minutes.
  • Stir in the cream and tomato paste, and simmer until the chicken is cooked through, approximately 10 to 15 minutes.
  • Add the almonds, cook for an additional 5 minutes and remove from the heat. Garnish with the cilantro leaves.

4 chicken breasts, bone in
4 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
1/3 cup olive oil
3/4 lb onion, diced large
4 teaspoons garlic, minced
2 teaspoons turmeric
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
32 ounces tomatoes, drained chopped
1 cup chicken stock
1/3 cup spinach, washed drained
1/2 cup yogurt, plain
1 tablespoon lemon juice
1/4 cup pine nuts

Steps:

  • Flour the chicken breasts.
  • Sear in olive oil.
  • Add onion; saute 2 minutes.
  • Add garlic.
  • Add turmeric, nutmeg, and cinnamon; cook 1 minute; do not burn.
  • Add tomatoes and chicken stock.
  • Bake in oven at 350 degrees Fahrenheit covered for 1 hour until meat is tender.
  • Remove dish from oven.
  • Add spinach; stir until wilted.
  • While spinach is wilting, place pine nuts on cookie sheet; roast for 3 minutes in oven; do not burn.
  • Cool slightly.
  • Add yogurt and lemon juice.
  • Add toasted pine nuts to top.

2 tablespoons butter
1 medium onion, chopped
4 garlic cloves, peeled, thinly sliced
2 teaspoons garam masala
2 teaspoons red curry powder
1/2 teaspoon chili powder
1 teaspoon ground ginger
2 tablespoons whole wheat flour
1 tablespoon olive oil
1 can (14 ounces) coconut milk
1/4 cup tomato paste
1 teaspoon salt
1/4 teaspoon pepper
3 pounds boneless skinless chicken breasts, cut into 1-inch pieces
Hot cooked rice
Optional: Fresh cilantro leaves and naan bread

Steps:

  • Heat large saucepan over medium-high heat; add butter and onion. Cook and stir until onions are tender, 2-3 minutes. Add garlic, cook until fragrant, 1 minute. Add garam marsala, curry powder, chili powder and ginger; cook and stir 1 minute longer. Add flour. Drizzle in olive oil until a paste is formed.
