Tips for a Perfect Butternut Squash Orzo:
- Choose the right squash: Look for small to medium-sized butternut squash that are symmetrical and heavy for their size.
- Roast the squash properly: Cut the squash in half lengthwise, scoop out the seeds, and drizzle with olive oil. Roast at 425°F for 45 minutes, or until tender and caramelized.
- Cook the orzo al dente: Cook the orzo according to the package instructions, but reduce the cooking time by a minute or two so that it remains slightly firm.
- Use a flavorful broth: Use a vegetable broth or chicken broth for the best flavor. If using vegetable broth, add a teaspoon of dried rosemary or thyme for extra flavor.
