BUTTERSCOTCH PUMPKIN BREAD

Butterscotch Pumpkin Bread image

I love anything and everything butterscotch, so I thought, "What the heck. Add it to pumpkin bread." It turned out to be lovely! It's even better when you toast a slice. :) Also, I used applesauce and egg whites to make it healthier, but you can use vegetable oil and whole eggs and it will still be just as good.

Tips:

  • Choose the right pumpkin: Use a sugar pumpkin or pie pumpkin, which are small and have a sweet, dense flavor. Avoid using large, carving pumpkins, as they have a bland taste and high water content.
  • Roast the pumpkin: Roasting the pumpkin before mashing it intensifies its flavor and makes it easier to work with. Prick the pumpkin with a fork, roast it at 400°F (200°C) for 45-60 minutes, or until tender. Allow it to cool before handling.
  • Use a food processor: A food processor makes quick work of mashing the roasted pumpkin and combining it with the other ingredients. If you don't have a food processor, you can use a potato masher or fork, but it will take a little more effort.
  • Don't overmix the batter: Overmixing can make the loaf tough. Mix the ingredients just until they are combined. A few lumps are okay.
  • Bake the loaf until a toothpick inserted into the center comes out clean: This usually takes around 60-70 minutes. Don't overbake, or the loaf will be dry.
  • Let the loaf cool completely before glazing: This allows the glaze to set properly and prevents it from seeping into the loaf.

Conclusion:

Butterscotch pumpkin loaf is a delicious and festive fall treat that is perfect for breakfast, brunch, or dessert. It is easy to make and can be tailored to your own preferences. For a sweeter loaf, add more brown sugar or maple syrup. For a spicier loaf, add a teaspoon of pumpkin pie spice or ground cinnamon. You can also add nuts, such as chopped walnuts or pecans, or dried fruits, such as raisins or cranberries. Enjoy!
