CAESAR SALAD SANDWICHES WITH CHICKEN

Caesar Salad Sandwiches With Chicken image

It's sandwich season. Who wants to cook much of anything when it's 100 degrees? I made these tonight and they went down nice and easy. I used Lemon & Herb seasoned chicken breasts from Costco and baked them when I first got up and the house was still cool enough. The chilled, sliced, chicken tasted just fine! Oh yes! I bake the breasts whole and from frozen and slice them when making the sandwiches. Thats about 40 minutes cooking time done my way.

Time 25m

Yield 6 serving(s)

Number Of Ingredients 6

6 medium hard rolls, preferably whole grain
3 cups romaine lettuce, torn
1/2 cup fat-free caesar salad dressing
1/3 cup grated parmesan cheese
1 1/2 lbs chicken breasts, cut into 3 inch long strips
2 teaspoons olive oil

Steps:

  • Set the oven on broil.
  • Cut each roll in half and scoop out the dough to form a pocket in one side of the bread.
  • Combine the lettuce, dressing and cheese in a bowl.
  • Place the chicken strips on a broiler pan and brush with the olive oil.
  • Broil the strips of chicken for a total of about 7 minutes, turning once.

  • Top with the other half of bread and serve.

Tips:

  • Use fresh, high-quality ingredients for the best flavor.
  • Make sure the chicken is cooked thoroughly before adding it to the salad.
  • Use a good quality mayonnaise for the dressing.
  • Add some freshly grated Parmesan cheese to the dressing for extra flavor.
  • If you don't have any croutons, you can use crumbled bacon or chopped walnuts instead.
  • Serve the salad immediately after assembling, or the croutons will get soggy.
