This is a wonderful recipe that I came across on another recipe site. I've modified it slightly to fit my tastes. This sauce is great served over pasta or dirty rice. This recipe is one I typically make for dinner parties or potlucks so it serves a crowd, but it can easily be cut down to a family appropriate amount.

2 lbs large shrimp, peeled and deveined
1 lb andouille sausages or 1 lb smoked sausage, cubed
8 -10 cloves garlic, minced
1/2 cup yellow onions or 1/2 cup white onion, diced
1/2 cup green bell pepper, diced
1/2 cup celery, diced
1 teaspoon dried basil
4 medium tomatoes, diced
2 tablespoons cajun seasoning
2 cups heavy cream
1 cup beer (any kind will work)
1/2 cup water
1 1/2 teaspoons salt
1 -2 tablespoon butter

Steps:

  • Heat large skillet to med-high heat.
  • Add butter, melt.
  • Add onion, green pepper, celery, garlic and basil.
  • Saute until onions are transparent but not browned.
  • Add sausage and saute until browned.
  • Add tomatoes and cook 5 minutes or until soft.
  • Add beer and water and boil until reduced by 1/3 to 1/2.
  • Add heavy cream, salt and Cajun seasonings.
  • Stir in shrimp and cook until pink; about 3-5 minutes.
  • Allow sauce to thicken.
  • If sauce is too thin you can add about a tsp.
  • flour or cornstarch dissolved in 1/4 cup water to the sauce.
  • Make sure to stir frequently while sauce is thickening to prevent lumping.
  • This can be served over your favorite rice or pasta.

1 c marinara sauce
4 c heavy cream
2 c chicken stock
2 Tbsp cajun seasoning
1 Tbsp worcestershire sauce
PASTA
1 lb linguine, cooked
FOR THE JAMBALAYA
2 skinless chicken breast, about 8 ounces each
5 Tbsp olive oil
salt and freshly ground pepper to taste
1 Tbsp minced garlic
12 oz xtra large shrimp about 16 peeded, devained, and tail removed
1 lb andouille sausage 1/4 cut slices
1/2 c dry white wine
1/2 c minced fresh italian parsley
FOR THE GARNISH:
1 c sliced scallions(green&white part)
1/4 c freshly grated parmesan cheese

Steps:

  • 1. For the sauce, place the marinara sauce in a heavy-bottomed saucepan and add the cream, chicken broth, Cajun seasoning, and Worcestershire sauce. Bring to a simmer over medium-low heat and then simmer slowly for about 40 minutes or until the liquid is reduced to about 4 cups.
  • 2. Pasta, bring a large pot of salted water to a boil over high heat. Add the pasta and turn down the heat to medium-high. Simmer, uncovered, for 10 to 12 minutes, stirring often, until pasta is al dente.
  • 3. Remove the pan from the heat and carefully strain through a large colander. Run briefly under cold running water to stop the cooking process. Drain the pasta well and reserve.
  • 4. Prepare the jambalaya, place the chicken breast in a shollow bowl, drizzle with 2 tablespoon of the olive oil, and season with salt and pepper. Grill the chicken for 5 minutes, turn the chicken over and cook for 5 minutes longer, until cooked through and the internal temperature reaches 165F on a meat thermometer. Cut the chicken breast into 1/2-inch dice and reserve.
  • 5. Pour remaining 3 tablespoons of olive oil into a large saucepan and set over medium-high heat. When hot, add the garlic and saute for 1 minutes, stirring until it begins to turn golden brown. Add the shrimp and sausage and saute for about 3 minutes, stirring often, until shrimp are no longer translucent and just cooked through. Add wine and reduce until the liquid has all evaporated. Add the cooked chicken meat and the ressrved tomatoe cream sauce. Bring the sauce to a simmer and add the parslely and the cooked pasta. Stir togther until until through. serve ware psta and garnish with the scallions an Parmesan cheese Enjoy!!!.

NICK'S SALMON WITH CAJUN CREAM SAUCE

slamon filet one piece 1 1/2 ft long.
mushrooms 8 oz cut into quarters
garlic 4 cloves minced
cajun spices 1/4 c.
brown sugar 1/2 c. packed
white pepper 1 Tbs
heavy cream 1/2 c
butter 4 Tbs
Jack Daniels Whiskey 1/4 c.

Steps:

  • Rinse filet and place on aluminum foil. Pour Whiskey over salmon. Let sit for 2-3 minutes. Sprinkle garlic over salmon then cover salmon with spices. Cut butter into slices and randomly place butter on salmon. Cover salmon with aluminum foil and fold over sides to make a pocket, so no steam can escape. This keeps liquid inside. After salmon is done, unfold foil and remove top. Cut salmon with spatula into servings and remove. Pour cream into liquid and mix with spoon or fork lightly. Pour over salmon then serve. Goes well with a sweet pineapple rice and a mixed vegetable.

Oh, by the way, this sauce would also be great spooned over some cod, or haddock. So, you ready... Let's get into the kitchen.

1 tsp creole seasoning (your favorite one), or to taste
1/2 tsp salt (table variety), or to taste
1/2 tsp black pepper (freshly ground), or to taste
3 Tbsp sweet butter, unsalted
1 c heavy cream, slightly warmed
1 c cooked, chopped shrimp
1 Tbsp lemon juice, freshly squeezed
1 lb linguini, or pasta of choice

Steps:

  • 1. Chop the shrimp into small pieces
  • 2. Lightly cook the shrimp, over medium heat. They should still be pink. Remove from heat, place into a bowl, and reserve.
  • 3. Melt the butter in a small saucepan, over medium heat.
  • 4. When foaming subsides, add the cream, and the Creole seasoning, the salt, and the pepper.
  • 5. Chef's Tip: Depending on the type of Creole seasoning you use (and how much), this dish might be salty enough. Remember: Taste, and then season... Taste, and then season.
  • 6. Allow the sauce to slowly simmer, until thickened, about 6 to 8 minutes.
  • 7. Chef's Note: Stovetop timings are based on the heat of your burner, so 6 to 8 minutes is just an average.
  • 8. Stir in the shrimp and simmer for an additional 5 minutes. Remove from heat, and stir in the lemon juice.
  • 9. Cook the pasta according to package directions to the al dente stage.
  • 10. Chef's Tip: Time the cooking of the pasta, so that it will be ready when the sauce is ready.
  • 11. Divide the pasta onto 4 plates, and ladle the warm shrimp sauce over the pasta. Enjoy.
