LOUISIANA STYLE FRENCH TOAST (OR PAIN PERDU)

Louisiana Style French Toast (or Pain Perdu) image

I learned how to make this rich, gooey, caramel-ly version of French Toast when I lived in Louisiana. It is very sweet - feel free to decrease the amount of sugar if you wish. There is no milk in this version. If you don't have a good nonstick pan, you may need to grease your pan with some oil or butter rather than the nonstick spray, as the sugar caramelizes and can be a little messy to clean.

2 large eggs, well beaten or use egg substitutes

sliced bread
butter-flavored cooking spray or oil

  • Beat together the eggs, sugar, and vanilla extract.
  • Dip each slice of bread into the batter to coat both sides.
  • Drain off excess batter and cook on a hot griddle that has been first sprayed with nonstick butter flavor spray (or brushed with oil).

SPICY CAJUN TOASTS

Spicy Cajun Toasts image

This recipe can be prepared in 45 minutes or less.

Yield Makes about 6 toasts

Number Of Ingredients 4

1/2 loaf Italian or French bread
1/4 cup unsalted butter
1 tablespoon Cajun or Creole seasoning
3/4 teaspoon salt

Steps:

  • Preheat oven to 375°F. Cut bread lengthwise into 1/4-inch-thick slices. In a saucepan melt butter and stir in seasoning and salt. Brush spice butter on 1 side of slices and on a baking sheet bake, buttered sides up, in middle of oven until golden, 8 to 10 minutes. Toasts keep in an airtight container at room temperature 3 days.

Tips:

  • Use thick-sliced bread for a more substantial French toast.
  • If you don't have day-old bread, you can toast it in the oven at 350 degrees Fahrenheit for 10-15 minutes to dry it out.
  • Coat the bread slices in the egg mixture and let them sit for a few minutes before cooking to allow the mixture to soak in.
  • Cook the French toast over medium heat to prevent it from burning.
  • Serve the French toast immediately with your favorite toppings.

Conclusion:

Cajun French toast is a delicious and easy-to-make breakfast or brunch dish. With a few simple ingredients and a little bit of time, you can create a meal that the whole family will enjoy. So next time you're looking for a new way to start your day, give Cajun French toast a try.
