2 lbs white potatoes, cut into wedges
1 teaspoon salt
1/2 teaspoon ground black pepper
1 1/2 tablespoons cajun seasoning or 1 1/2 tablespoons creole seasoning
1 (8 ounce) container low-fat sour cream
1 green onion, chopped
1 tablespoon red wine vinegar
1/2 teaspoon ground black pepper

Steps:

  • Heat oven to 425º.
  • Place first 4 ingredients in a ziplock bag. Seal and shake to coat potatoes.
  • Place potatoes on a baking sheet covered with cooking spray.
  • Bake 30 minutes or until tender and golden brown.

1 teaspoon Cajun seasoning
3 tablespoons nonfat Greek yogurt
1 tablespoon Creole mustard

Steps:

  • Preheat the oven to 425 degrees F. Cut the potatoes into long wedges about 1-inch thick. Toss the potatoes with the olive oil and Cajun seasoning. 1 medium head cauliflower, cut into florets
½ cup shredded Cheddar cheese
2 ounces cream cheese
1 large egg
3 tablespoons grated Parmesan cheese
2 tablespoons all-purpose flour
1 tablespoon dried parsley
2 teaspoons seafood seasoning (such as Old Bay®)
