I got this green bean casserole from a cajun cookbook. It takes a little bit longer to prepare than traditional green bean casseroles but is well worth it!

Time 1h30m

Yield 6-8 serving(s)

Number Of Ingredients 12

4 slices thick-sliced bacon, cut into pieces
2 small onions, chopped
2 garlic cloves
3 lbs green beans
1/4 cup butter
1 pinch of grated nutmeg
1/2 cup all-purpose flour
1/2 cup heavy cream
1 1/2 cups grated white cheddar cheese
4 cups chicken broth, more as needed
salt and pepper
2 (6 ounce) cans fried onions

Steps:

  • Heat the bacon in a large pot or Dutch oven over medium-high heat until lightly browned and tender. Add 1 onion (chopped) and saute' until tender, 6 to 8 minutes. Add the garlic and saute' a few more minutes.
  • Add the green beans and enough broth or water to just cover, bring to a boil, reduce the heat to low, and simmer, covered for 25 to 35 minutes, until beans are tender and have melted into the cooking liquid. Season the beans generously with salt and pepper.
  • Strain the cooking liquid from the beans and reserve (you should have about 2 1/2 cups).
  • Preheat the oven to 350 degrees.
  • Melt the butter in a large skillet over medium-low heat. Add the rest of the chopped onion, salt, and nutmeg and cook, stirring, until very soft, 6 to 8 minutes. Add the flour and stir until incorporated.
  • Stir in the cream and reserved bean cooking liquid and cook, stirring, until the sauce is thick enough to fall slowly from a spoon, 5 to 7 minutes.
  • Stir in the cheese, then add green beans and toss until combined.
  • Transfer mixture to 9X13 baking dish and bake until casserole is hot and bubbly around edges, about 25 minutes. Top with fried onions and cook an additional 10 - 15 minutes.
  • Remove from oven and cool slightly before serving.

GREEN BEAN CASSEROLE

Green Bean Casserole image

If you're the kind of person who likes some crispy with your creamy, this is the dish for you. Forget the old-school canned soup: This version uses a homemade base with hen of the woods mushrooms, though any kind of mushroom you like - oyster, cremini, even button - will work. Whether you make it for a crowd or for just a few people, everyone will be coming back for seconds.

Time 45m

Yield 10 to 12 servings

Number Of Ingredients 18

Nonstick cooking spray
2 1/2 pounds haricots verts or French green beans, trimmed and cut into 1-inch pieces
1 pound hen of the woods mushrooms (or cremini, oyster or other mushroom), cut into bite-size pieces
2 large shallots, halved lengthwise and thinly sliced into half-moons
4 garlic cloves, minced
2 tablespoons extra-virgin olive oil
Kosher salt and black pepper
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 quart heavy cream or half-and-half
1 teaspoon Cajun seasoning
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon chicken base concentrate (or 1/2 bouillon cube)
1/4 teaspoon ground nutmeg
1 3/4 cups shredded or grated Parmesan
1 cup panko bread crumbs
2 cups store-bought or homemade fried shallots or onions

Steps:

  • Heat oven to 400 degrees. Coat a 9-by-13 baking dish with nonstick cooking spray. On a rimmed sheet pan lined with parchment paper, toss together green beans, mushrooms, sliced shallots, garlic and olive oil; season with salt and pepper to taste then spread evenly on the pan. Roast until the vegetables brown in spots and soften, about 30 minutes, tossing halfway through. (Alternatively, if you want the green beans extra soft, set them on an unlined sheet pan, add 3 tablespoons water, cover with aluminum foil, and cook until the vegetables are slightly firmer than you want in the end result, about 30 to 45 minutes.)
  • Meanwhile, in a large saucepan over medium-low heat, melt the butter, then add the flour. Cook for about 1 to 2 minutes, whisking constantly until it comes together and begins to turn golden in color.
  • Add heavy cream and whisk until it starts to thicken, 6 to 8 minutes. Add the Cajun seasoning, onion and garlic powders, chicken base, nutmeg and 1/2 teaspoon pepper. Whisk to combine, then add 1 1/2 cups Parmesan until melted. Taste and adjust seasonings.
  • When the green beans are cooked, add them to the saucepan, and toss to coat until mixture is thoroughly heated. Transfer green bean mixture to the baking dish.
  • In a medium bowl, combine bread crumbs, fried shallots and the remaining 1/4 cup Parmesan. Spread evenly over the top of the casserole.
  • Set the broiler to high, and broil until brown and bubbly (don't walk away!), about 1 to 2 minutes. Serve hot.

Tips:

  • Use fresh or frozen green beans: Canned green beans can be used in a pinch, but fresh or frozen green beans will give your casserole a more vibrant flavor and texture.
  • Don't overcook the green beans: They should be tender but still have a slight crunch to them.
  • Use a good quality cream soup: A creamy soup base is essential for a creamy casserole. Look for a soup that is made with real cream and butter.
  • Add some grated cheese. Cheese can be added into the top of the casserole to give it extra cheese flavor and browning.
  • Bake the casserole until it is bubbly and golden brown: This will ensure that the casserole is cooked through and the flavors have had a chance to meld together.
  • Serve with your favorite sides: Cornbread, mashed potatoes, or a salad are all great options.

Conclusion:

Cajun green bean casserole is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to use up leftover green beans, and it can be easily tailored to your own taste. Whether you like your casserole creamy or cheesy, or with a little bit of spice, there is a recipe out there for you. So next time you are looking for a simple but flavorful side dish, give Cajun green bean casserole a try. You won't be disappointed!
