2 grilled salmon fillets (about 7 ounces each), skin removed, fish flaked
2 green onions, finely chopped
1 tablespoon fresh lemon juice
1 teaspoon finely grated lemon peel
1/2 cup (about) Piment d'Espelette Mayonnaise
4 4-inch squares ciabatta or focaccia
Arugula

Steps:

  • Place first 4 ingredients in medium bowl; stir in mayonnaise to taste. Season with salt and pepper. Halve each bread square horizontally. Top 4 pieces with arugula, then salmon; cover with remaining bread.

8 ounces salmon
1 -2 tablespoon seafood cajun seasoning (recipe follows)
1 tablespoon butter
1 ciabatta roll
2 -3 leaves green leaf lettuce
1/2 tomatoes, sliced thin
1/2 red onion, sliced thin
1 teaspoon cayenne pepper
1/2 tablespoon kosher salt
2 teaspoons paprika
1 teaspoon fresh ground black pepper
2 teaspoons granulated garlic
1 teaspoon onion powder
1 teaspoon gumbo file
1 teaspoon Old Bay Seasoning
3 ounces goat cheese
4 ounces mayonnaise (about 1/2 cup)
1 1/2 tablespoons fresh lemon juice
3 sprigs parsley
salt
fresh ground black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Season the salmon with Seafood Cajun Seasoning.
  • In a medium saute pan, saute salmon in butter on medium-high heat, fat side down, until golden brown. Using a metal spatula turn salmon over and cook until golden brown. Transfer salmon onto a small sheet tray and place in oven for 4 to 6 minutes. Remove from oven and let rest.
  • Slice ciabatta roll lengthwise and place under broiler until lightly golden. Spread Goat Cheese and Lemon Mayonnaise on roll. Arrange salmon, lettuce, tomatoes and onions on roll. Enjoy!

  • In a medium bowl, combine cayenne pepper, kosher salt, paprika, black pepper, garlic, onion powder, gumbo file and crab boil seasoning.

Grilled Vegetable Sandwiches with Sherry Vinaigrette and Manchego on Ciabatta image

3 Japanese eggplants, sliced in 1/2 lengthwise
3 red bell peppers
1 red onion, peeled and sliced into 1/4-inch thick slices
1 large beefsteak tomato, cut into 1/2-inch thick slices
Extra-virgin olive oil or canola oil, for grilling
Salt and pepper
3 cloves garlic, finely chopped
1/4 cup chopped flat-leaf parsley leaves, plus 2 to 3 tablespoons torn leaves, for garnish
1/2 cup extra-virgin olive oil, plus more for drizzling bread
1 loaf ciabatta, sliced lengthwise
Sherry Vinaigrette, recipe follows
8 slices Manchego cheese
1/4 cup aged sherry vinegar
1 tablespoon Dijon mustard
Salt and pepper

Steps:

  • Heat grill to high. Brush eggplant, peppers, and onion and tomato slices with oil and season with salt and pepper. Grill eggplant, tomato, and onion on both sides until slightly charred and just cooked through. Grill peppers on all sides until charred, remove from the grill, place in a bag, and let rest 10 minutes. Remove skin from the peppers and cut into 1-inch slices. Cut the eggplant, tomato, and onion into large dice.
  • Whisk garlic, 1/4 cup chopped parsley, and 1/2 cup olive oil together in a large bowl. Add the cut vegetables to the bowl and let marinate at room temperature for 30 minutes.
  • Drizzle cut sides of ciabatta with 2 to 3 tablespoons olive oil, sprinkle with salt and pepper, and grill, cut side down, for 1 to 2 minutes. Brush grilled bread with some of the Sherry Vinaigrette and then layer on the mixed vegetables and Manchego. Drizzle with more vinaigrette and top with torn parsley. Place other piece of bread on top, wrap sandwich in foil, and place on grill with 2 foil-wrapped bricks on top. Grill for 2 to 3 minutes. Remove from grill and foil and cut sandwich crosswise into 2-inch thick slices.
  • Whisk all ingredients together in a medium bowl. Season, to taste, with salt and pepper.

4 rolls, split and lightly toasted (6-inch)
1 cup shredded cabbage
8 slices tomatoes
3 tablespoons low-fat mayonnaise
3 tablespoons powdered cajun spices
nonstick cooking spray
salt and pepper
lemon wedge

Steps:

  • Heat a heavy skillet over high heat for 15 to 20 minutes.
  • Mix mayonnaise and enough Cajun spice to reach desired hotness.

1 1/2 ounces smoked salmon (more if desired)
1/2 ounce goat cheese (about 2 tablespoons)
1 to 2 tablespoons plain yogurt
Several cucumber slices (about 1 1/2 ounces)
A squeeze of lemon
Salt
freshly ground pepper
Chopped chives or dill
2 slices whole-grain sandwich bread, rye bread or a heartier whole-grain country bread

Steps:

  • In a bowl, mash the goat cheese with a fork. Add the yogurt, and mix together until smooth. Spread half on one slice of bread, and top with the smoked salmon. Slice the cucumbers very thin, and layer them over the salmon. If desired, season the cucumbers with a little salt and pepper, and squeeze on some lemon juice. Sprinkle the chopped chives or dill over the cucumbers.
  • Spread the remaining goat cheese mixture over the other piece of bread. Place on top of the cucumbers, press down and cut the sandwich in half.
