1 package (16 ounces) hot lean turkey breakfast sausage
1 large onion, chopped
1 medium green pepper, chopped
1 can (14-1/2 ounces) diced tomatoes with garlic and onion, undrained
1 can (14-1/2 ounces) reduced-sodium chicken broth
3 teaspoons Cajun seasoning
1/4 teaspoon pepper
2 bags boil-in-bag white rice
Louisiana-style hot sauce, optional

Steps:

  • In a large nonstick skillet, cook and crumble sausage with onion and pepper over medium-high heat until no longer pink, 5-7 minutes., Stir in tomatoes, broth, Cajun seasoning, pepper and contents of rice bags; bring to a boil. 2 cups water
1 cup Old El Paso™ Thick 'n Chunky salsa
8 oz smoked kielbasa or Polish sausage, thinly sliced
1 can (15 to 16 oz) black-eyed peas, drained, rinsed
1 cup frozen corn

1 c long grain rice, uncooked
8 oz sliced smoked sausage
1/2 c chopped onion
1/2 c chopped green pepper
16 oz can(s) stewed tomatoes
10 3/4 oz chicken broth
2 c water
1 tsp sage
1 tsp hot sauce
salt & pepper to taste

  • 1. in large skillet combine all ingredients. bring to a boil-cover-reduce heat & simmer for 20 minutes. remove lid & simmer for an additional 5 to 10 minutes.
