CAMPANHA BBQ SAUCE
This is the famous Brazilian "Molho à Campanha", or literaly "Sauce a la campanha". It is always present in brazilian-style barbecues. A great sauce to be used on grilled meat, either bovine or fowl. Side-dishes, such as french fries or rice, could also enjoy the added flavour.

Steps:
- Chop the Onion in small cubes.

BAREFOOT CONTESSA'S BARBECUE SAUCE
The Contessa told an interesting story about this recipe. She said that about 20 years ago she asked a chef on the show to make three types of barbecue sauces: one mustardy, one tomatoey, and one Chinesey. When she tasted them, the first one was too mustardy, the second was too tomatoey, and the third was too Chinesey! She decided to try combining the three, and she said it turned out being the best sauce she'd ever tried. This is the result, and it's her favorite to this day.

Steps:
- In a large saucepan on low heat, saute the onions and garlic with the vegetable oil for 10 to 15 minutes, until the onions are translucent but not browned.
- Add the tomato paste, vinegar, honey, Worcestershire sauce, mustard, soy sauce, hoisin sauce, chili powder, cumin, and red pepper flakes. Simmer uncovered on low heat for 30 minutes.
- Use immediately or store in the refrigerator.
- The Contessa recommends using this with about 2 1/2 to 3 pounds of chicken. Just marinate it in 2/3 of the barbecue sauce for a few hours or overnight in the refrigerator, then slap it on the grill. Serve it with the extra sauce on the side!
Tips:
- Choose the right ingredients: Use high-quality ingredients for the best flavor. Look for fresh vegetables, ripe fruits, and flavorful spices.
- Don't be afraid to experiment: There are many different ways to make BBQ sauce, so feel free to experiment with different ingredients and flavors. Try adding different types of vinegar, spices, or fruits to create a unique sauce that you'll love.
- Let the sauce simmer: Simmering the sauce allows the flavors to meld together and develop. The longer you simmer the sauce, the more complex the flavor will be.
- Taste the sauce as you go: It's important to taste the sauce as you're making it so that you can adjust the flavors as needed. If the sauce is too sweet, add a little bit of vinegar. If it's too smoky, add a little bit of sugar.
- Use the sauce on everything: BBQ sauce is not just for grilled meats. It can also be used on chicken, fish, vegetables, and even pizza. Get creative and find new ways to use your favorite BBQ sauce.
Conclusion:
With so many different recipes to choose from, you're sure to find a BBQ sauce that you'll love. Whether you like your sauce sweet, smoky, or spicy, there's a recipe out there for you. So fire up the grill and get ready to enjoy some delicious BBQ!
